But note, baking is optional, and if an oven is not handy, then serve the Macaroni and Cheese immediately after taking it off the flame without adding additional cheddar or bread crumbs. It’ll still taste divine.

RECIPE
INGREDIENTS
1 teaspoon salt, or to taste
225 grams macaroni, or other elbow pasta, about 2¼ cups
2 tablespoons butter
4 tablespoons maida (all-purpose flour)
675 ml milk, whole milk or full-cream milk, about 2¾ cups
1/8 teaspoon black pepper powder
1/8 teaspoon nutmeg, finely grated
1⁄2 teaspoon thyme leaves, chopped
1/8 teaspoon red chilli powder, mild, or substitute paprika
1⁄4 teaspoon hot sauce, such as tabasco (optional)
120 grams gruyere cheese, grated
250 grams cheddar cheese, grated, divided use
salt, to taste
1/3 cup panko bread crumbs
COOKING METHOD
- Fill a large pot with water and bring to a boil over high heat. Toss in salt, stir, then add macaroni. Stir well and cook for about 8 minutes or till al dente – cooked but still slightly firm to the bite. Drain in a colander and set aside.
- Preheat oven to 200°C.
- Place a heavy pan or skillet over medium heat and add butter. Once the butter has melted and starts foaming, tip in all-purpose flour (maida) and cook for 2 to 3 minutes, stirring continuously. Pour in hot milk, stir to mix, then whisk till the sauce thickens, about 2 minutes.
- Remove from heat. Add black pepper, nutmeg, thyme, red chilli powder (or paprika), Tabasco (if using), gruyere cheese, and 175 grams cheddar cheese. Mix well with a wooden spoon. The heat from the sauce will melt the cheese. Check seasoning and add salt if needed.
- Add cooked macaroni and stir till evenly incorporated. Transfer to a greased baking dish or oven proof casserole dish.
- Sprinkle 75 grams cheddar cheese evenly on top followed by panko breadcrumbs. Place in the preheated oven and bake till the top is golden-brown, about 15 minutes.
- Serve hot
Cook’s Note: If you prefer not to bake your Macaroni and Cheese, then omit step 6, and serve hot immediately after mixing in the macaroni in step 5.
