INGREDIENTS
90 ml yogurt, (about 6 tablespoons), preferably from whole milk or full-cream milk
2 teaspoons dried oregano, divided use
2 3⁄4 teaspoons salt, or to taste, divided use
2 teaspoons sumac, divided use
1 teaspoon lime zest, grated
- 300 grams penne pasta
- 100 grams butter, cut into 2 pieces
1 teaspoon black pepper powder
1 teaspoon garlic paste
1⁄4 cup tomato puree, store-bought
1⁄2 teaspoon chilli flakes
- 1⁄2 cup mint leaves, loosely packed, chopped
1⁄2 cup parsley leaves, loosely packed, chopped
COOKING METHOD
- Make yogurt sauce: Tip yogurt into a medium glass bowl and add 1 teaspoon dried oregano, ¾ teaspoon salt, 1 teaspoon sumac, and lime zest. Whisk together till smooth and evenly pink. Set aside.
- Boil pasta: Place a large pan over high heat and pour in 2 liters water. Add 2 teaspoons salt and bring to a boil. Tip in penne pasta or any other short pasta that you like. Cook on a rolling boil, stirring occasionally, till the pasta is done al-dente, about 10 minutes. Remove from heat and drain in a colander, saving ½ to ¾ cup pasta cooking water.
- Mix pasta and yogurt sauce: Transfer the cooked pasta to a large bowl and add prepared yogurt sauce. Pour in ½ cup pasta cooking water and toss with two large spoons till well mixed. Set aside and keep warm.
- Make browned butter sauce: Add butter to a saucepan over medium heat. Allow the butter to melt then continue cooking till the foam starts to subside. Stir and swirl the butter in the pan till the milk solids in the butter at the bottom of the pan turn a nice golden brown. Remove from heat. Quickly add black pepper powder, 1 teaspoon sumac, garlic paste, store-bought tomato puree, chilli flakes, and 1 teaspoon dried oregano. Whisk till the butter sauce starts to come together. It will not completely emulsify.
- Toss pasta with sauce: Pour the browned butter sauce over the pasta. Add the herbs – chopped parsley and mint leaves. Use two large spoons to toss the pasta with the sauce and herbs. Serve immediately.
Cook’s Note: You can add the additional ¼ cup saved pasta cooking water if you prefer your pasta to be saucier.
