INGREDIENTS
1⁄4 cup extra virgin olive oil
8 cloves garlic, slivered
900 grams tomato, blanched, peeled, and chopped
1⁄2 teaspoon red chilli flakes
1 teaspoon dried oregano
1 teaspoon salt, or to taste
1 sprig basil leaves
- 225 grams fespro ragi fusilli pasta
2 teaspoons salt
COOKING METHOD
- Make Pizza Sauce: Place a heavy saucepan over medium heat and add extra-virgin olive oil. Once the oil heats up, toss in garlic slivers, and stir as they sizzle. Note that the garlic should not get coloured but just sizzle for a few seconds. Turn the heat to high and tip in the blanched and chopped tomatoes. Stir to mix well with the garlic and oil, then add red chilli flakes and dried oregano. Cook for about 2 minutes before pouring in 120 ml (1/2 cup) hot water and stirring in 1 teaspoon salt. Cook for 10 to 11 minutes, stirring occasionally.
- Complete Pizza Sauce: Add a basil sprig and stir into the tomatoes. Continue to simmer for another 8 to 9 minutes, stirring occasionally with a wooden spatula and mashing the tomatoes on the side of the sauce pan. Use a fork to remove the basil sprig. Use an handheld immersion blender to blend the sauce to a smooth consistency. Note that this is optional and you can omit this if you prefer a chunky sauce.
- Boil Pasta: While the sauce is simmering, bring a large pot of water to a rolling boil. Add 2 teaspoons salt, stir, then tip in Fespro Ragi Fusilli Pasta. Boil pasta for 9 to 10 minutes or till al dente. Drain in a colander reserving ½ cup pasta boiling water.
