INGREDIENTS
2 large eggs, yolks and whites separated
1⁄4 teaspoon black pepper powder
1⁄4 teaspoon red chilli powder
1⁄4 teaspoon turmeric powder (haldi)
1/8 teaspoon salt, or to taste
1 teaspoon oil
1 teaspoon butter
1 tablespoon onion, finely chopped
1 tablespoon tomato, finely chopped
2 teaspoons coriander leaves, fresh, finely chopped
1 green chilli, fresh, deseeded, finely chopped
2 tablespoons grated cheese
COOKING METHOD
- Tip egg yolks into a bowl and add black pepper powder, red chilli powder, turmeric powder, and salt. Whisk well and set aside.
- In a separate large bowl, add egg whites and whisk well till the egg fluffs up, 2 to 3 minutes, but stop just before it starts forming soft peaks. Pour in the egg yolk mixture and stir lightly or fold till mixed.
- Place a medium skillet or frying pan over medium heat. Add oil and butter. Once the butter stops foaming, pour the egg mixture into the center of the skillet. Tilt the skillet a bit so that the mixture spreads evenly covering the base of the pan.
- Sprinkle on onion, tomato, coriander leaves, green chillies, and grated cheese. After the egg has cooked a bit and the edges have set, about 1 minute, check the underside of the omelette by carefully lifting up its edge with a spatula and looking at the colour. It should be a very light golden. Free the edges all around with a spatula and use the spatula to gently lift and fold 1/3 of the omelette onto itself.
- Cook for about another minute till golden, then fold the omelette (from the same side) once more, forming a thick envelope shape. Reduce heat to low if needed and continue to cook for 1 to 1½ minutes till the omelette has cooked through.
- Carefully lift with a spatula or slide onto a plate. Garnish with a sprig of coriander and serve hot with fried or fresh sliced tomatoes, bacon or sausages, buttered crusty bread or pav, and condiments of your choice.
Cook’s Note: You can choose to cover the omelette for about a minute after sprinkling on the cheese so that the trapped heat kickstarts the cooking process and the cheese begins to melt.
