To assemble the cheesy tortilla wrap, you will also require 6 flour tortillas readily available in supermarkets or 6 flour rotis which you can make at home using 1¼ cups all-purpose flour or maida just like you make regular whole-wheat rotis. Many recipes call for flour-based tortillas to make the wraps, but we often use maida rotis made in the Yummefy kitchen for the wraps as they wor out cheaper and turns out delicious too.
Fresh hari chutney gives a slightly spicy and herbaceous flavour to the cheese tortilla wraps, while nylon sev and onions pre-soaked in vinegar impart great flavour and texture to them. Cheese is one of the critical ingredients in this recipe. We use the Go Cheese Pizza Blend cheese which is a ready grated of mix mozzarella and cheddar, along with some additional Go Cheese mozzarella. This combination results in a melting and gooey cheese filling, just the way kids (and I) like it. To toast or grill the wraps you will also need just a smidgen of oil.

In this case, they are almost the same – both are made out of all-purpose flour and both are unleavened breads. They are also both made in a similar process by kneading dough and rolling them into thin pancake-like rounds, which are then cooked atop a griddle or a tawa. All-purpose flour or maida roti can be substituted for tortillas.
How to make cheesy tortilla wrap| How do you make a wrap?
There are many ways to make a wrap, but we follow an easy and delicious method in this recipe. We first make the masala potato filling and hari chutney and set aside. Then, we place a flour tortilla or a maida roti on a flat surface such as the counter or on a cutting board, and make a slit in the tortilla from its center point towards ourself using a sharp knife to create two flaps in the bottom half of the tortilla. Fill the cheesy tortilla wrap with each of the four fillings i.e. hari chutney, masala potatoes and sev, vinegared onions, and the cheese blend. INGREDIENTS
200 grams go cheese pizza blend cheese
30 grams go cheese mozzarella cheese
- 1 tablespoon oil
1 teaspoon cumin seeds (jeera)
1 piece ginger, ½-inch in size, finely chopped
3 cloves garlic, finely chopped
1 green chilli, deseeded, finely chopped
1 teaspoon coriander powder
1⁄2 teaspoon red chilli powder
1⁄2 teaspoon turmeric powder (haldi)
1 teaspoon salt, or to taste
1 teaspoon dried mango powder (amchur)
1⁄2 teaspoon garam masala powder
2 tablespoons coriander leaves
300 grams potatoes, boiled, peeled, and roughly mashed. the potatoes should not be completely mashed, and some small potato pieces and texture will be appreciated.
- 6 flour tortillas, or 6 flour rotis (maida) made from 1¼ cups all-purpose flour (maida)
4 tablespoons hari chutney, see link to hari chutney recipe in method below
2 tablespoons nylon sev (thin sev)
75 grams onions, cut into thin rings and soaked in 1 tablespoon white vinegar for 2 hours
1 1⁄2 teaspoons oil
COOKING METHOD
- Make potato filling: Place a saucepan over medium heat. Add oil and once it has heated up, toss in cumin seeds. As soon as they sizzle, add ginger, garlic, and green chillies; stir well till lightly coloured. Tip in coriander powder, red chilli powder, turmeric powder, and salt. Stir well then add dried mango powder (amchur), garam masala powder, and coriander leaves. Sauté, stirring for about 30 seconds. Tip in roughly mashed potatoes and cook, stirring well, till evenly mixed with the masala, 3 to 4 minutes. Remove from heat and reserve.
- Place a flour tortilla or a flour roti (maida roti) on the counter or on a cutting board. Make a slit in the tortilla from its center point towards yourself using a sharp knife – from the center till 6 if the tortilla was a clock – to create two flaps in the bottom half of the tortilla.
- Fill the cheesy tortilla wrap: Think of the tortilla as 4 quarters. Evenly slather 2 teaspoons hari chutney on to the bottom left quarter of the tortilla (the quarter closest to you). Spoon 2 tablespoons reserved potato mixture on the upper left quarter of the tortilla and press down and spread evenly. Sprinkle 2 teaspoons nylon sev onto the potato mixture. Place a small handful of vinegared onions on the 3rd quarter (top right-hand side). And in the last quarter (bottom right-hand quarter), sprinkle 30 grams Go Cheese pizza cheese and then grate about 5 grams Go Cheese mozzarella cheese onto the pizza cheese.
- Fold the cheesy tortilla wrap: Fold the left bottom quarter upwards over the potato quarter ensuring that the edges are aligned. Press down gently. Now fold this quarter (the one that now has potatoes and hari chutney) to the right over the onions. Again, align the edges and press down gently. Finally, fold this quarter downwards towards yourself over the cheese quarter. Align the edges and press down gently. Your cheesy tortilla wrap is ready to cook. Repeat for the remaining 5 tortillas or maida rotis making 6 cheesy tortilla wraps in total.
- Cook or grill cheesy tortilla wraps: Pour ¼ teaspoon oil into a heavy cast iron frying pan or skillet over medium heat. Once hot, place a wrap in the pan and press down gently. Cook for about 1½ minutes on one side till the tortilla turns golden. Gently flip the tortilla wrap and cook on the other side till the cheese melts, about 1 minute. Repeat for the remaining cheesy tortilla wraps.
- Cut each tortilla wrap into half and serve hot.
Yield: 6 cheesy tortilla wraps
Serves: 6 as a snack or 4 as part of a larger meal.
