    INGREDIENTS

    2 cup cream, (about 500 ml)
    4 egg yolks, large
    1/4 cup sugar
    1 teaspoon vanilla extract
    1/3 cup castor sugar, or as required

    COOKING METHOD

    1. Place a heavy saucepan over medium heat and add cream. Stir to ensure that it does not catch the bottom of the pan. Remove from heat once it starts bubbling gently. Set aside.
       
    2. Preheat oven to 150°C.
       
    3. Pour egg yolks into a large bowl. Add sugar and whisk well till pale yellow and thick. Pour in the warm cream, whisking, till blended. Do not over-whisk and aerate the mixture. Add vanilla extract and stir.
       
    4. Place shallow ramekins in a high-rimmed baking dish. Fill ramekins with the custard mixture till about a quarter to half inch from the top. Now create a water bath by filling the baking dish with hot water to halfway up the sides of the ramekins. Carefully slide the baking dish into the preheated oven and bake for 20-35 minutes till the sides of the custards are just set but the centers still have a good jiggle. Note that the baking time will vary according to the depth of the ramekins, so watch carefully and remove when you think they are ready. This is important as you do not want to overcook them or for them to brown.
       
    5. Remove and cool to room temperature.
       
    6. Cover the ramekins with plastic wrap and chill till very cold, 2 to 3 hours.
       
    7. Remove from the refrigerator just before serving. Sieve a thin layer of castor sugar across the tops of the custards. Use a kitchen blow-torch to melt and lightly brown the sugar evenly. Serve right away.
