The US-based chef Jean-Georges Vongerichten claims to have created molten chocolate cake in New York City (1987) while chocolatier Jacques Torres from France says such a cake already existed. Vongerichten, supposedly pulled a cake out from the oven before its scheduled time and found the center runny but loved the taste and texture. Whether he invented it or not, he is still believed to have popularized the molten chocolate cake as we know it now.

DIY double boiler | How to make a double boiler at home
If you do not have a double boiler, it can easily be made at home. Here’s how! First choose two pots / pans that are almost the same size with one just slight smaller than the other. To check if they are right for making a double boiler, place the smaller one on the larger one. It should sit on the rim of the larger one with just a bit of its base going into the larger one below. It should not go all the way in. Fill the larger lower pot with an inch of water and put the burner on medium heat. When the water starts simmering, place the other smaller pot (an oven proof glass bowl works too) on top of the pot which has simmering water. This should be done in a manner that the heatproof pot on top does not touch the water but sits on the rim of the pot below it. Now reduce the heat to low and your double boiler is ready. In our chocolate lave cake recipe, now is when you add butter and chocolate in the top pot. Keep stirring until just melted and no more. You can then remove the heatproof bowl with the melted chocolate and butter and continue to stir the chocolate-butter mixture using a spatula until smooth. The purpose of the double boiler is to apply gentle heat to the ingredients it contains, in this case, the chocolate and butter. If chocolate is heated directly it can burn. You could do the same process in a microwave too but will need to constantly watch the chocolate to prevent any unfavourable results.

RECIPE
INGREDIENTS
80 grams butter, cubed
250 grams cooking chocolate, chopped into small pieces or grated
5 large eggs, at room temperature
80 grams powdered sugar, (about ¾ cup)
95 grams all-purpose flour (maida), about 2/3 cup
COOKING METHOD
- Generously butter 8 ramekins or other small ovenproof bowls. Dust with all-purpose flour (maida) and tap the ramekins while turning them to spread the flour. Set aside.
- Melt butter and chocolate: If you have a double boiler, use it to melt the butter and chocolate. If not, create a double boiler by placing a pot with 1-inch water in it over medium heat. Once the water starts simmering, place another heatproof pan (I have used a heatproof glass bowl) on the pan with the simmering water. The heatproof pan should sit nestled on the rim of the lower pot but not touch the simmering water. Reduce heat to low. Add and stir the butter and chocolate until just about melted. Remove from heat and take the bowl with the chocolate-butter mixture off the lower pot. Continue stirring with a spatula until smooth. Set aside.
- Beat eggs and sugar: Break eggs into a large mixing bowl. Use an electric hand whisk and whisk eggs on low for 2 minutes. Tip in powdered sugar and whisk on high for 5 to 6 minutes till the mixture turns pale in colour and thickens to almost hold its shape. Add all-purpose flour (maida) and beat on low till just incorporated. Do not over-beat.
- Mix chocolate and eggs: Add ¼ of the beaten egg mixture into the chocolate. Use a spatula to fold the chocolate and egg together till mixed. Tip half the chocolate mixture back into the remaining eggs and fold gently till incorporated. Then add the remaining half of the chocolate mixture to the egg mixture and fold gently till incorporated and no white streaks remain.
- Fill the ramekins: Either pour or spoon the cake batter into the 8 ramekins equally. Cover with plastic cling wrap and refrigerate overnight.
- Bake the chocolate Lava cake: Preheat the oven to 220°C. Remove the ramekins from the refrigerator about 10 to 15 minutes before baking. Remove plastic cling wrap and place the chocolate lava cake ramekins into the oven. Bake for 15 to 17 minutes (depending upon the heat of your oven) till the centers looks like they have set and are no longer wet. Remove from the oven and set on a wire rack to cool for about 10 minutes.
- Unmolding and serving the chocolate lava cakes: If you do not want to risk unmolding the cakes, they can be served in the ramekins along with a dollop of cream on vanilla ice cream on the side. Otherwise, carefully (they’re still hot) place a small platter or plate over one ramekin and quickly flip the plate and ramekin over together. Then tap the bottom of the ramekin to loosen the chocolate lava cake. Lift off the ramekin and serve immediately with a dollop of cream or a scoop of vanilla ice cream. Repeat for remaining cakes.
