RECIPE
INGREDIENTS
400 grams tomato, (about 4 large), finely chopped
1 1⁄2 teaspoons black pepper powder
2 cloves garlic, minced
1 teaspoon salt, or to taste
2 teaspoons apple cider vinegar
1⁄4 cup basil leaves, sliced into thin long strips
4 tablespoons olive oil, extra virgin
1 baguette, or other crusty bread
1 clove garlic, whole, peeled
COOKING METHOD
- Place chopped tomato in a large glass bowl and add black pepper powder, minced garlic, salt, apple cider vinegar, and basil leaves. Stir to mix. Add olive oil, mix well and set aside.
- Slice baguette at an angle into 3/4-inch slices – you will need 10 – 12 slices. Lightly toast them either in a toaster or an oven. Remove and lightly rub the whole garlic clove on all slices. Do not rub too hard as the garlic will taste too strong.
- Spoon about 1 tablespoon tomato mixture onto each sliced bread; drizzle with olive oil, and serve immediately.
