    INGREDIENTS

    400 gram tomato, (about 4 large), finely chopped
    1 1/2 teaspoon black pepper powder
    2 clove garlic, minced
    1 teaspoon salt, or to taste
    2 teaspoon apple cider vinegar
    1/4 cup basil leaves, sliced into thin long strips
    4 tablespoon olive oil, extra virgin
    1 baguette, or other crusty bread
    1 clove garlic, whole, peeled

    COOKING METHOD

    1. Place chopped tomato in a large glass bowl and add black pepper powder, minced garlic, salt, apple cider vinegar, and basil leaves. Stir to mix. Add olive oil, mix well and set aside.
       
    2. Slice baguette at an angle into 3/4-inch slices – you will need 10 – 12 slices. Lightly toast them either in a toaster or an oven. Remove and lightly rub the whole garlic clove on all slices. Do not rub too hard as the garlic will taste too strong.
       
    3. Spoon about 1 tablespoon tomato mixture onto each sliced bread; drizzle with olive oil, and serve immediately.
