  • RECIPE

    INGREDIENTS

    2 eggs, large, yolks and whites separated
    2 egg yolks
    90 gram castor sugar, (about 7 tablespoons)
    1 teaspoon vanilla extract
    500 gram mascarpone cheese
    1 cup black coffee, brewed strong
    4 tablespoon rum, or marsala
    12 savoiardi biscuits, or boudoir biscuits
    bittersweet chocolate, to grate

    COOKING METHOD

    1. Place a saucepan of water over medium heat and bring to a simmer.
       
    2. Place all 4 egg yolks, sugar, and vanilla extract in a metal or heatproof glass bowl and place on the sauce pan of simmering water creating a double boiler. Ensure that the simmering water is not in contact with the bottom of the heatproof bowl. Whisk vigorously. You will notice that the egg mixture begins to turn pale in color and thicken. Stop whisking and remove from heat once the egg mixture has thickened enough to leave a clear trail on the surface when it drips from the whisk. Set aside to cool, mixing occasionally so that a skin does not form on the surface.
       
    3. Once completely cool, mix in mascarpone cheese till well blended.
       
    4. Beat egg whites in a medium mixing bowl till they form soft peaks. Gently fold 1/3 of the egg whites into the mascarpone mixture. Follow by folding in an additional 1/3 of the egg whites till incorporated, and then the remaining egg whites also folded in gently. You want to maintain as much of the volume and lightness of the egg whites as possible. Set aside.
       
    5. Mix black coffee and rum in wide bottomed bowl and quickly dip the biscuits in, one at a time, and place on the bottom of 8” x 8” dish. You will need to dip very briefly otherwise the biscuits will soak in too much liquid. Continue till you have covered the bottom of the dish with soaked biscuits completely.
       
    6. Spoon over the mascarpone mixture and smooth the top.  Grate the chocolate directly over the tiramisu until it covers the surface. Be as generous as you like with the chocolate.
       
    7. Cover the bowl with cling wrap and refrigerate for 8 hours before serving.
