The ubiquity and star status of easy paneer tikka, an all-time favourite snack, rests on its perfect blend of delicious spices and aromatics and the smoky flavour of the marinated and tandoor or oven-cooked cubes of paneer, grilled to a golden perfection.
Our paneer tikka recipe starts with large chunks of succulent paneer first being coated with a mixture of garam masala, black cumin, ajwain (carom seeds), turmeric powder, white pepper, and red chilli powder.
Then marinate paneer in a marinade of cream, besan (chickpea flour), kasuri methi (dried fenugreek leaves), and beaten egg.
The marinated paneer tikka is then threaded on a skewer and cooked in the oven (or a wood-fired tandoor, if you have one).
Onions, tomatoes, and capsicum are also sometimes marinated and grilled along with the paneer tikka, though we prefer the taste of pure paneer tikka without the veggies.
Chaat masala and lemon juice are drizzled at the end for that yummy extra zest and punch.

RECIPE
INGREDIENTS
400 grams paneer, cut into 2-inch x 1½-inch x 1-inch pieces
1 1⁄2 teaspoons garam masala, (recipe link in method below)
1⁄2 teaspoon black cumin seeds, (kala jeera)
1 1⁄2 teaspoons ajwain (carom seeds)
1⁄2 teaspoon turmeric powder (haldi)
1⁄2 teaspoon white pepper powder
1⁄4 teaspoon red chilli powder

80 ml cream, thick
2 tablespoons besan, (chickpea flour)
1 teaspoon dried fenugreek (kasuri methi)
1 teaspoon salt, or to taste
1 egg, lightly beaten
chaat masala, for garnish, (recipe link in method below)
COOKING METHOD
- Place paneer pieces in a large bowl. Add garam masala, black cumin, ajwain, turmeric powder, white pepper, and red chilli powder. Mix gently with your hand so that the masalas coat the paneer nicely without breaking the paneer. Set aside for 10 minute.
- Pour cream over paneer. Add besan (chickpea flour), kasuri methi (dried fenugreek leaves), salt, and lightly beaten egg. Mix gently but well till the batter is smooth and coats the paneer. Let marinate for 1 hour.
- Preheat oven to 240°C.
- Carefully pick up 1 piece of paneer and slide it onto a skewer (metal or bamboo). Skewer another 2 to 3 pieces of paneer (depending upon the size of your skewer) onto the same skewer, leaving a very slight gap between each piece.
- Repeat with additional skewers till all the remaining pieces of paneer have been skewered.
- Place skewers on a high-sided roasting pan so that the paneer is suspended without touching the pan. This will enable even heat and even cooking. Bake for about 10 minutes.
- Remove from oven and carefully slide off skewers. Place in a serving platter, sprinkle generously with chaat masala, and serve immediately.
