- Baking to perfection is a must because proper setting of the cream is dependent on appropriate heating followed by cooling and refrigeration.
- If the sides of pots de crème have not set on completing its time in the oven, then let it sit in the oven for 5 more minutes after turning the oven off. Note that the center should still jiggle when you shake it. Remove, allow it to cool completely, then cover with plastic cling wrap, and refrigerate.
- We know it’s difficult but resist the urge to dig in until it’s nicely chilled.
- Getting the proportions right is the key to a successful preparation. Carefully follow all steps suggested in our Chocolate Pots de Crème recipe video
- The water bath and the aluminium foil on top are responsible for the gentle and even baking of the dessert. So, these are essential steps that cannot be missed.
Get Experimental – Variations on our insanely good Chocolate Pots de Crème recipe:
In our recipe we use coffee to amplify the flavor of chocolate but you can omit chocolate completely and make a coffee pot de crème. Typically, pots de crème are prepared in vanilla or chocolate flavours but there’s no dearth for the flavours you can try with this easy pudding dessert. In case you set your mind on trying citrus-based flavours like lemon, kiwi, strawberry, raspberry or orange with pots de crème then make sure to add the citrus flavours after adding and mixing the eggs (at the time of adding vanilla) to avoid curdling. You can even give butterscotch, mango, pistachio and caramel flavours a try with this recipe.
Serving and garnishing suggestions:
It is best to prepare this chocolate pudding recipe in small cups or ramekins. Chocolate Pots de Crème being a rich baked custard, is usually eaten in small quantities, therefore you either set it in small bowls or go for a larger family style bowl filled half way up. Note that you will need to adjust the cooking time if you are using a larger bowl. While we have been told that this pudding dessert remains fresh for upto a week if refrigerated, and can therefore be prepared well in advance for a party, we can’t claim firsthand knowledge of that because it’s usually eaten and cleaned up the day its made.
You can garnish the chocolate pots de crème with whipped cream and biscotti or chocolate shavings. Children might like some sprinkles, strawberries and toasted marshmallows on top to add some color to the cups. It’s always good to serve this dessert with demitasse spoons straight in the cups.
Fun facts:
Pot de Crème reserved a special place in French dessert menus therefore the French started producing special tiny porcelain cups to serve it. The cups are the same name as dessert - Pots de Crème. You can either find these porcelain cups in antique stores or museums. The French have even reserved a day to celebrate this custard pudding. Every year French public gorges on various flavors of Pots De Crème on August 27th which is celebrated as National Pots De Crème Day in France.
Binge on:
If you like the silky, decadent goodness in a pot of this Chocolate Pots de Crème - we assure you that once you try it, you will be hooked – then you should definitely also try crème brûlée, crème caramel, vanilla and chocolate pudding, and chocolate mousse, some other popular desserts prepared with similar ingredients and also superbly delicious.

3⁄4 teaspoon coffee powder
1 pinch salt
5 egg yolks, large, lightly beaten
1 egg, large, lightly beaten
1 teaspoon vanilla extract
COOKING METHOD
- Place 6 ramekins in a deep roasting pan and set aside. Preheat oven to 180°C.
- Place chocolate in a heatproof metal or glass bowl.

- Pour this chocolate custard into the 6 ramekins, dividing equally. Create a bain-marie by carefully pouring boiling water into the roasting pan till the water reaches halfway up the sides of the ramekins.
- Cover the roasting pan tightly with foil and place in the center rack of the oven for about 30 minutes or till the sides of the Chocolate Pots de Crème are set but the centers are still slightly wobbly.
