What is granola made of?
Granola is a baked mixture of oats, nuts, seeds, and sweeteners, though not always limited to these ingredients. It is often enjoyed as a breakfast cereal with milk or yoghurt. For preparing our Yummefy-ed granola recipe at home, you will need rolled oats, melon seeds, walnuts, raisins, almonds, cinnamon powder, amaranth flour (ramdana or rajgira flour), popped amaranth (popped ramdana or rajgira), foxnuts (makhana), ripe banana, vanilla extract, honey and oil. But have fun – change the ingredients to what you enjoy eating or what you have available at home. Try almond flour or a millet flour instead of amaranth flour, change the variety of nuts adding ones that you like, add other berries or dry fruit like cranberries, dried apricots, etc. – this recipe should just be an indicator of what you can add, so make granola a blank canvas with a variety of ingredients to colour it.
How granola came to be known in its current form
Granola was earlier called Granula and was even registered as a trademark in the US back in the 19th century. This trademark was for whole grain foods which were crumbled and baked. The credit for inventing granula goes to Dr. James Caleb Jackson in New York in 1863 who invented it at a health spa. It was then sold by Our Home Granula Company and was comprised of Graham flour. In the 1960s, fruits and nuts began being added to it and thus granula became more popular alongside the hippie movement which leaned towards a natural lifestyle.
Due to the immense popularity of granola as a snack, it also began being pressed with sugar syrup or honey and baked into bars sealed individually and sold as an on-the-go snack. This is now conveniently used as ‘power bars’ by mountain hikers, trekkers, as well as travelers worldwide.
How to make granola well
To make this healthy granola recipe well, preheating the oven is a must as it ensures you get the right temperature from the word go. Pre-heating helps to start baking the granola immediately once you place the tray in the oven.
Warming the honey and oil gently helps the honey melt and thin out so that it evenly coats the rest of the ingredients used for this banana nut crunch cereal recipe. The vanilla extract adds an inviting aroma to the honey nut granola. If you prefer other extracts such as almond extract or orange extract, give them a try. They will result in a different aromatic and flavour profile.
Using parchment paper or any other baking sheet ensures the granola doesn't stick to the pan. It is also important to evenly spread and press the mixture down after spooning it on to the baking tray for even cooking. Also critical is stirring the granola every 7 or 8 minutes during baking – this ensures that the honey nut crunch granola bakes evenly and results in a golden brown colour all over.
While our granola recipe asks you to preheat your oven to 150° Celsius / 300° Fahrenheit, oven temperatures vary from oven to oven, so keep checking your granola periodically. If you feel it has turned golden brown and crispy earlier than the stated time, remove it from the oven, or continue baking it for longer if you feel it isn’t done.

Yogurt is packed with the goodness of protein while bananas pack in potassium. When you combine these two ingredients in your breakfast, they help build muscle and are considered a good post-workout snack. And our granola recipe is a great way to consume these together.
What is the difference between granola and muesli?
While granola is baked and has added sweeteners, muesli is raw and has no sweeteners except dried fruits and berries.

RECIPE
INGREDIENTS
3 cups rolled oats
1⁄2 cup melon seed
1⁄2 cup walnut, shelled and broken into pieces
8 almonds, peeled and slivered
1 teaspoon cinnamon powder (dalchini)
3⁄4 cup amaranth flour
1⁄2 cup popped amaranth
2/3 cup foxnuts (makhana)
6 tablespoons honey
2 tablespoons oil
1 cup ripe mashed banana
1⁄2 teaspoon vanilla extract
1⁄4 cup raisins (kishmish)
COOKING METHOD
- Preheat oven to 150°C / 300°F.
- Tip rolled oats into a large bowl. Add melon seeds, walnuts, slivered almonds, cinnamon powder, amaranth flour, popped amaranth, and foxnuts (makhana). Stir well till evenly mixed. Set aside.
- Place a medium skillet or frying pan over medium heat. Pour in honey and oil. Stir, mixing well till the honey melts and thins out, about a minute. Remove from heat. Tip mashed banana and vanilla extract into the pan with honey. Stir to combine.
- Pour the honey-banana mixture onto the oats and nuts and mix well with a spoon or spatula. The honey-banana should coat the oats mixture evenly. Set this granola aside while you prepare a baking tray.
- Cover the inner base of a baking tray with parchment paper. Use a large spoon or ladle to transfer the granola onto the baking tray. Then use the back of the spoon or ladle to press down and evenly spread the granola in the baking tray.
- Place the tray in the center of the preheated oven and bake till golden brown and slightly crispy, 30 to 40 minutes. While baking, carefully stir every 7 to 8 minutes so that the granola bakes evenly. Remove from heat and sprinkle with raisins. Mix well and set aside till completely cooled.
- Once the granola has cooled to room temperature, transfer to an airtight container to store. Or eat immediately as a snack or with some milk poured over it.
Cook’s Note: Granola is delicious as a snack just as is. Or spoon into a bowl and pour some milk over it. Another option is to spoon this over some thick creamy yogurt and serve.
