    INGREDIENTS

    110 gram all-purpose flour (maida), (maida)
    3/4 teaspoon baking powder
    1/8 teaspoon salt
    4 1/2 apples, medium
    2 eggs, large
    150 gram castor sugar
    3 1/2 tablespoon rum
    3/4 teaspoon vanilla extract
    125 gram butter, salted, separate use

    COOKING METHOD

    1. Place butter in a small saucepan over low heat. Melt completely and then leave cool to room temperature. Set aside.
       
    2. Butter an 8-inch springform baking pan. Set aside.
       
    3. Preheat oven to 180 °C
       
    4. In a medium mixing bowl, add flour, baking powder, and salt. Mix well.
       
    5. Peel apples and cut into 1-inch cubes. Place in a large mixing bowl and set aside.
       
    6. Break eggs into a large bowl and whisk till foamy. Add castor sugar and continue to whisk till nicely creamed and light in color. Pour in rum; stir. Add vanilla extract. Whisk to mix.
       
    7. Add half the quantity of flour mixture and half quantity butter to the eggs. Whisk briefly to mix. Add the remaining flour mixture and butter and stir to mix. Do not overmix.
       
    8. Add batter to the apples and fold with a spatula to coat well. Pour this entire mixture into the prepared springform baking pan and smooth the top, pressing down to get the top fairly even.
       
    9. Place the pan in the center of the preheated oven, and bake for 45 to 55 minutes until a toothpick inserted into the center of the cake comes out clean. Set the pan on a wire rack to cool for 10 to 15 minutes before running a knife around the edges to loosen the cake. Open the springform pan and remove the cake.
       
    10. Serve hot with vanilla ice cream.
