Easy Pasta With Cherry Tomatoes | Quick Vegetarian Cooking Step By Step

RECIPE
INGREDIENTS
250 grams pasta, preferably shell pasta
2 tablespoons olive oil
100 grams onions, thinly sliced in rounds
500 grams tomato, preferably cherry tomatoes, each sliced in half. if using larger tomatoes, chop in 1-inch pieces.
1 teaspoon black pepper powder
1 teaspoon salt, or to taste
1⁄2 teaspoon rosemary, fresh, chopped
100 grams ricotta cheese
1⁄4 teaspoon nutmeg, grated
COOKING METHOD
- Bring salted water to a boil in a large saucepan over high heat. Slide in pasta and cook as per instructions on the packet, or till al-dente. Remove from heat and drain, reserving about ½ cup of pasta water.
- Place a heavy skillet on medium heat and add oil. Once hot, add onions and stir. Sauté till onions turn translucent and are just starting to color, 2 to 3 minutes. Slide in cherry tomatoes and increase heat to high. Stir well. Add black pepper powder and salt; stir, then add rosemary.
- Spoon ricotta cheese over the tomatoes and stir till the cheese has melted into a sauce, about 30 seconds.
- Tip in cooked pasta. Stir to coat the pasta well with the cheese, till it is heated through. Add 1 to 2 tablespoons (or more if needed) of reserved pasta water to loosen the sauce. Stir; add nutmeg, and continue to cook for another 30 seconds.
- Remove from heat and serve immediately.
