    INGREDIENTS

    250 gram pasta, preferably shell pasta
    2 tablespoon olive oil
    100 gram onions, thinly sliced in rounds
    500 gram tomato, preferably cherry tomatoes, each sliced in half. if using larger tomatoes, chop in 1-inch pieces.
    1 teaspoon black pepper powder
    1 teaspoon salt, or to taste
    1/2 teaspoon rosemary, fresh, chopped
    100 gram ricotta cheese
    1/4 teaspoon nutmeg, grated

    COOKING METHOD

    1. Bring salted water to a boil in a large saucepan over high heat. Slide in pasta and cook as per instructions on the packet, or till al-dente. Remove from heat and drain, reserving about ½ cup of pasta water.
       
    2. Place a heavy skillet on medium heat and add oil. Once hot, add onions and stir. Sauté till onions turn translucent and are just starting to color, 2 to 3 minutes. Slide in cherry tomatoes and increase heat to high. Stir well. Add black pepper powder and salt; stir, then add rosemary.
       
    3. Spoon ricotta cheese over the tomatoes and stir till the cheese has melted into a sauce, about 30 seconds.
       
    4. Tip in cooked pasta. Stir to coat the pasta well with the cheese, till it is heated through. Add 1 to 2 tablespoons (or more if needed) of reserved pasta water to loosen the sauce. Stir; add nutmeg, and continue to cook for another 30 seconds.
       
    5. Remove from heat and serve immediately.
