To make the best dahi batata puri , you will need puris (pani puri or golgappa shells), cold whipped yogurt or dahi, and boiled potatoes or batata. The trio of dahi, batata, and puris come together to form the name of this irresistible dish. To proceed with this easy dahi batata puri recipe, you will also require tamarind and date sweet chutney or meetha chutney, spicy hari chutney or teekha chutney, red chilli powder, roasted cumin powder, and the thinnest variety of sev or nylon sev as it is known.
We recommend making the tamarind and date sweet chutney and the spicy hari chutney in advance using our recipes (the chutneys can be stored safely in the freezer for up to 2 months), as you will then be able to get your dahi batata puri ready in a jiffy.
Dahi batata puri Mumbai style uses the puri (pani puri or golgappa shell) as a crispy vehicle for an explosion of flavours and textures in your mouth: chilled creamy whipped dahi (whipping ensures you get a creamy texture so do not skip this step), sweet and sour date and tamarind, spicy and herbal green chutney, boiled potatoes with a soft yet firm texture, flavourful spice powders, and crunch from the brittle nylon sev. This is a great dish for everybody who loves flavour, and especially for those who have low tolerance for super spicy pani puri or water-filled golgappas.
This recipe can be easily made vegan by adding sprouts, onions, tomatoes and lime and omitting the yogurt altogether. Or one can use vegan yogurt instead of regular yogurt and proceed with the same recipe.
Is dahi puri good for health?
Though dahi batata puri Mumbai style is essentially a street food dish, it is healthier if made in the clean environment of a home kitchen as you have complete control over the quality of the ingredients used. Yogurt is probiotic and contains good bacteria which are helpful in gut health and digestion. Coriander not only improves the taste of the dahi batata puri but contains Vitamins A and C as well.
Since this recipe has deep fried golgappas, sev, and sweet chutney, it is not advisable for diabetics and weight-watchers. If you are making this for kids, you can omit the red chilli powder and make a less spicy version of the teekha hari chutney or omit it altogether to suit their palate.

INGREDIENTS
14 puris
125 grams potatoes, boiled, peeled, and diced, to make about ½ cup
5 tablespoons spicy hari chutney, (see link for recipe in method below)
7 tablespoons sweet chutney, (see link for recipe in method below)
240 ml yogurt, about 1 cup, hung in a muslin cloth for 20 minutes to drain, lightly whipped
3⁄4 teaspoon red chilli powder
3⁄4 teaspoon roasted cumin powder
7 tablespoons nylon sev (thin sev)
1 tablespoon coriander leaves, chopped
COOKING METHOD
- Use your thumb to press down on to the top center of a puri and break a clean hole. The hole should be large enough to stuff ingredients and fill the puri. Repeat for all puris. Set 7 puris on each plate, making 2 plates.
- Fill each puri with 1½ teaspoons boiled and diced potato, followed by 1 teaspoon spicy hari chutney, 1½ teaspoons sweet chutney, and 1 tablespoon yogurt. Generously sprinkle over red chilli powder, roasted cumin powder, and about 1½ teaspoons nylon sev on each dahi batata puri.
- Garnish with chopped coriander leaves and serve immediately.
Cook’s Note: While you can keep all the ingredients ready in advance, the puris should not be filled until just before serving. Stuffing them in advance will result in soggy dahi batata puris.
