RECIPE
INGREDIENTS
225 grams butter, (1 cup) warmed very slightly till soft
170 grams powdered sugar, (1 cup)
4 medium eggs, at room temperature
1⁄2 teaspoon vanilla extract, or vanilla essence
130 grams maida (all-purpose flour), (1 cup)
50 grams cocoa powder, (1/2 cup)
2 teaspoons baking powder
powdered sugar, for dusting
COOKING METHOD
- Prepare baking tin: Liberally butter a 9-inch round baking tin lined with parchment paper and then dust with all-purpose flour. Tap to discard excess flour.
- In a medium mixing bowl, cream butter and powdered sugar with an electric whisk till light in colour and fluffy. Whisk in eggs one at a time, beating well to incorporate before each addition. Add vanilla extract (or essence) and whisk.
- Add all-purpose flour (maida) in 2 two additions, whisking slowly till just incorporated. Tip in cocoa powder and baking powder and mix with a spatula till combined.
- Transfer batter to the prepared baking tin, tap the tin on the counter-top for the batter to settle, then use a spatula to smooth out the top.
- Place a small metal bowl upside down in a large pan with a lid on high heat. Note that the pan should be large and deep enough to hold the cake tin comfortably and allow for the cake to rise. Pour water into the saucepan to come up to just below the top of the small bowl. Once the water comes to a fast simmer, carefully place the cake tin on the upside metal bowl (note that the water should not be touching the cake tin). Place the lid and allow to steam until a toothpick inserted into the center of the chocolate cake comes out clean, 20 to 25 minutes. You might need to top up the water in the saucepan during the steaming process. Carefully remove the cake tin (it’ll be very hot) and cool for about 10 minutes.
- Run a sharp knife around the edges and quickly invert the chocolate cake onto a platter or flat plate. Flip it once again so that it’s top side up.
- Place a homemade stencil or other cutout design on the chocolate cake and dust liberally with powdered sugar. Carefully remove stencil.
- Serve chocolate cake with vanilla ice cream or whipped cream.
Cook’s Note: The chocolate cake can be stored in an airtight container for up to 3 days at room temperature.
