In my opinion, this is the best chilli potato salad available, one that I repeatedly come back to when I need a quick, tasty, and savoury dish with a kick to please my palate. Think tender potatoes tossed in a spicy chilli dressing with the freshness of lime juice, spring onions and coriander leaves – flavours that make this chilli potato salad truly stand out.
I use this easy chilli potato salad recipe for a hassle-free, quick yet filling meal for myself or as part of a larger meal for parties. And the added advantage is that kids love it too!
To prepare this chilli potato salad recipe, you will need potatoes cut into wedges with their skin on. The ingredients required also include olive oil, garlic, store-bought tomato puree, allspice powder or kebabchini, red chilli powder, salt, spring onions, lime juice, and coriander leaves.

There are a variety of potato salads found in cuisines across the world. The American potato salad made using mayonnaise along with herbs is quite famous. Boil then simmer potato wedges for 15 minutes
The variety of potatoes you choose to use will make or break your chilli potato salad dish. Potatoes are the key ingredient in this recipe and their texture is important to the final outcome of the salad. Waxy potatoes are known to be firm and hold their shape well upon cutting and tossing with the rest of the ingredients. On the other hand, the starchy varieties of potatoes tend to break upon cooking or while chopping. We do not want our potatoes breaking up while making the salad as we want a firm texture and not a mushy mass. Hence, we recommend using the waxy variety or other firm varieties of potatoes which you may find in your local market.

The reason we keep the skin on in the potato wedges is that they add flavour and a slight texture while biting into the potatoes. Potato skins are also believed to be healthy as they contain fibre.

Add lime juice to the dressing / sauce after turning the heat off
We have used olive oil to make the salad but you could use neutral tasting oils such as rice bran oil or safflower oil to make this easy chilli potato salad.
The heat in this chilli potato salad recipe can be adjusted to your liking. If your chilli tolerance level is good and you like things spicy you could increase the recommended chilli powder quantity as needed. If, you prefer mild heat you could reduce the quantity of the chilli powder. But we recommend you add at least some amount of chilli powder to allow this recipe to love up to its name!
Add the boiled potato wedges into the chilli dressing / sauce in the kadhai
Toss the salad in the kadhai or wok in which you make the dressing or the chilli sauce. Doing so ensures your potatoes get evenly coated and that all the sauce gets used up. While tossing the salad ensure that you handle the potatoes gently as they are boiled and may break upon applying too much pressure.
