RECIPE
INGREDIENTS
1⁄2 cup walnut, california walnut kernels
4 tablespoons ghee
4 pieces cinnamon, 1-inch in length
5 cloves (laung)
5 green cardamom pods
100 grams onions, (about 1 medium onion), finely sliced
2 cups basmati rice, (400 grams rice), soaked in water for 15 minutes, drained
1⁄4 cup raisins (kishmish)
4 cups water
1 1⁄2 teaspoons salt, or to taste
100 grams onions, finely sliced, fried in ghee till golden brown
Garnish
100 grams onions, finely sliced, fried in ghee till golden brown
COOKING METHOD
- Dry roast walnuts: Place a kadhai or wok over medium heat and tip in California walnut kernels. Dry roast, stirring continuously, till nicely toasted, 2 to 3 minutes. Scoop out the roasted walnut kernels and set aside.
- Sauté whole spices and onions: Increase heat to high and pour ghee into the same kadhai or wok. When the ghee is hot, reduce heat to medium, and toss in cinnamon, cloves, and green cardamom pods. Stir till the cardamom plumps up nicely. Tip in raw sliced onion and sauté till golden brown, 7 to 8 minutes.
- Cook rice: Tip drained basmati rice into the kadhai and stir gently so that ghee coats each rice grain, about 2 minutes. Add raisins (kishmish) and continue to stir gently (so grains don’t break) till the colour of the rice begins to whiten, another 3 to 4 minutes. Add half the quantity roasted California walnut kernels (saving half for the garnish), mix well, and the pour in 1-liter hot water (about 4 cups) along with salt. Stir well to mix and bring to a boil. Cover, stir once after a minute, then cook, covered, till the water is absorbed, 10 to 12 minutes.
- Fluff ghee rice: Remove rice from heat and fluff with a fork. Let the rice rest, covered, for 5 minutes before transferring to a platter.
- Garnish ghee rice: Garnish Kerala ghee rice with fried onions and roasted California walnut kernels and serve hot.
