RECIPE
INGREDIENTS
Sauce
2 1⁄2 tablespoons fish sauce
1 1⁄2 tablespoons tamarind paste
1 tablespoon granulated sugar
1 1⁄2 tablespoons palm sugar
2 teaspoons vegetable oil
5 shallots, chopped
1 egg, large
60 grams bean curd (tofu), firm, diced into 1/4 inch cubes and deep fried
1 1⁄4 tablespoons dried prawns, washed and dried
200 grams pad thai rice noodles, soaked in water for 2 hours
1⁄4 teaspoon red chilli powder
1 small handful bean sprouts
3 spring onions, sliced in 1/4 inch rounds
1 1⁄2 tablespoons roasted peanuts, crushed
2 teaspoons red chilli powder, to serve on the side
1 lime, cut into 4 wedges to serve on the side
COOKING METHOD
- Place a sauce pan over medium heat and add fish sauce. Pour in tamarind paste and follow by adding granulated sugar and palm sugar. Stir well; breaking up the palm sugar, and till the granulated sugar has dissolved completely into a smooth sauce. Remove from heat and set aside.
- Add oil to a large wok over medium heat. Once hot but not smoking, slide in chopped shallots and fry for about 1 minute, stirring till lightly colored. Move shallots to one side of the wok and add the egg to the other side of the wok. Stir the egg quickly, breaking it up, in its half of the wok, trying not to incorporate the shallots into the egg. Once the egg has cooked a bit and the scrambled curds have set, about 1 minute, mix it in with the shallots in the wok and continue to cook for another 30 seconds. Add the fried bean curd cubes and dried prawns to the wok and stir well for another 2 minutes.
- Add drained pad thai noodles to the wok and stir through to mix. Continue to cook, stirring for about 2 minutes. Pour in reserved sauce and stir to ensure it coats the noodles well. Add red chilli powder and stir. Cook for 1 minute before adding bean sprouts and spring onions. Stir well, and then add crushed peanuts to the wok. Check that the noodles have cooked through and that they have a good salt, sweet, and sour balance.
- Place in a bowl and serve with red chilli powder and wedges of lime on the side.
Serves: 4 as part of a larger meal
Prep Time: 15 minutes plus 2 hours unattended soaking time
Cook Time: 18 minutes
