RECIPE
INGREDIENTS
Dressing
1 piece ginger, 1-inch, peeled and grated
2 tablespoons kikkoman soy sauce
2 green chillies, fresh, mild, deseeded and julienned
6 tablespoons extra virgin olive oil
1 tablespoon lime juice
1 teaspoon chinese sesame oil
1⁄2 teaspoon black pepper powder
1⁄2 teaspoon salt, or to taste

1 bunch mixed salad leaves
1 handful rocket (arugula) leaves
1⁄4 medium watermelon, peeled, cut into 1-inch cubes, chilled in the refrigerator
1 small handful mint leaves, fresh
1 small handful coriander leaves, fresh
1⁄2 cup roasted peanuts, unsalted, roughly crushed
125 grams feta cheese
COOKING METHOD
- Make salad dressing: in a medium-sized glass bowl, add ginger, soya sauce, green chillies, olive oil, lime juice, sesame oil, black pepper powder, and salt. Whisk well till the dressing emulsifies and thickens. Reserve.
- Assemble salad: throw mixed salad leaves into a large salad bowl. Add rocket leaves, coriander leaves, watermelon, mint leaves, and top with reserved dressing. Toss salad well.
- Sprinkle roasted peanuts, toss salad again, and then dot the top of the salad with feta cheese.
- Serve immediately
Serves: 4 as part of a larger meal
