RECIPE
INGREDIENTS
1⁄2 teaspoon salt, or to taste
1⁄2 teaspoon white pepper powder
3 teaspoons cornflour
2 teaspoons soya sauce
2 teaspoons chinese sesame oil
1 tablespoon vegetarian oyster sauce, (optional)
Filling:
1 tablespoon vegetable oil
1 piece ginger, 1-inch, peeled and finely chopped
1 green chilli, deseeded, finely chopped
2 spring onions, finely chopped
6 cloves garlic, peeled and finely chopped
1 red bell pepper, cut into juliennes (matchstick-like pieces)
1 cup cabbage, shredded
1 cup carrot, grated
1⁄2 cup bean sprouts
1⁄2 cup firm tofu, sliced into matchstick-like pieces, then deep fried (optional but recommended)

8 spring roll or wonton wrapper sheets
2 teaspoons cornflour, mixed with 1 tablespoon water to make a slurry
vegetable oil, for frying
COOKING METHOD
- Place salt in a medium bowl; add white pepper, corn flour, soya sauce, 2 tablespoons water, sesame oil, and veg oyster sauce (if using), and mix well to combine. Reserve this sauce.
- Make Filling: Place a heavy wok or kadhai over high heat; pour in oil. Once the oil is hot but not smoking, toss in ginger, green chillies, spring onions, and garlic; stir and add red bell pepper. Cook, stirring, 2 to 3 minutes, then tip in shredded cabbage and carrot and stir-fry for 2 minutes. Add bean sprouts and tofu (if using); continue to cook another 2 to 3 minutes. Pour in reserved sauce, stir well, then cover with a tight-fitting lid for about 2 minutes. Remove lid, stir, cook for another minute if required; remove from heat and transfer to a bowl.
- Assemble Spring Rolls: Lay a square spring roll wrapper sheet (or wonton wrapper sheet) on a clean flat surface with one corner towards you. Place about 1 tablespoon of prepared filling on the wrapper about 1-inch inside the corner closest to you. Roll the corner away from you over the filling, pressing down gently. Stop rolling when you reach the center of the wrapper; apply a thin layer of corn flour slurry on the right, left, and top edges of the wrapper. Fold the left and right edges inwards like an envelope, pressing down, and then continue rolling tightly to complete the roll. Repeat for all spring roll sheets.
- Place a heavy wok or kadhai over high heat; add oil to fry. Once oil is hot but not smoking, carefully place spring rolls in the oil, in batches, without crowding the wok. Fry till golden brown all over, about 2 minutes. Remove and place on kitchen paper to drain. Repeat for remaining spring rolls.
- Serve immediately with sliced red chilies, sliced cucumbers, carrots, and spring onions, along with a sauce or condiment of your choice.
