    INGREDIENTS

    1 cup white chickpeas (kabuli chana), soaked in water to cover, overnight
    100 gram onions, (about 1 medium onion) finely chopped
    2 teaspoon ginger, chopped
    10 clove garlic, chopped
    1/2 teaspoon cumin powder
    1/2 teaspoon garam masala
    1 teaspoon amchur (dried mango powder), (dried mango powder)
    2 green chillies, fresh, deseeded and finely chopped
    1 teaspoon salt, or to taste
    2 tablespoon coriander leaves, fresh, chopped
    1 cup vegetable oil, to fry
    hari chutney, or other condiments of your choice to serve

    COOKING METHOD

    1. Place soaked and drained chanas in a wet grinder or blender. Add 1/3 cup of water and grind (pulsing) to slightly granular paste. There might be a few small pieces of chana remaining in the mixture - that is okay.
       
    2. Turn out chana mixture into a medium bowl. Add onion, ginger, garlic, cumin powder, garam masala, amchur, green chillies, coriander leaves, and salt. Mix using your hand or a wooden spatula till just incorporated.
       
    3. Wet your hands and tear off a walnut-size chunk of the mixture. Roll into a ball with your palms, and then flatten slightly to form a fat disk, smoothing the edges. Set down. Repeat for the remaining mixture, making about 20 kebabs.
       
    4. Heat oil in a medium kadhai or wok over high heat. Once hot, test with a small piece of mixture - if it sizzles with quick fast moving bubbles, the oil is ready. Carefully place a few shammi kebabs into the hot oil without overcrowding the kadhai. Fry, turning once, till golden brown all over, about 4 minutes. Remove with a slotted spoon, letting oil drip away, and place on kitchen paper so that excess oil can be absorbed.
       
    5. Serve hot with hari chutney or other condiments of your choice.
