1 1⁄2 tablespoons vegetable oil
2 dried red chillies
5 slices ginger, round, thin
3 cloves garlic, sliced
2 spring onions, cut at an angle into 1/2-inch pieces, white and green parts separated
1⁄4 cup carrot, chopped and steamed
1⁄4 cup green beans, sliced into 1/4-inch pieces, steamed
1 cup rice, cooked preferably a day earlier and refrigerated (makes about 3 cups cooked rice)
2 teaspoons light soya sauce
3⁄4 teaspoon salt, or to taste
