    INGREDIENTS

    1 1/2 tablespoon vegetable oil
    2 dried red chillies
    5 slice ginger, round, thin
    3 clove garlic, sliced
    2 spring onions, cut at an angle into 1/2-inch pieces, white and green parts separated
    1/4 cup carrot, chopped and steamed
    1/4 cup green beans, sliced into 1/4-inch pieces, steamed
    1 cup rice, cooked preferably a day earlier and refrigerated (makes about 3 cups cooked rice)
    2 teaspoon light soya sauce
    3/4 teaspoon salt, or to taste

    COOKING METHOD

    1. Place a wok or pan on high heat. Once hot, add oil. When the oil is hot but not yet smoking, toss in dried red chillies and stir till they start darkening in color, about 30 seconds. Add ginger slices; stir. Slide in garlic followed by the white part of the spring onions. Stir-fry for about a minute.
       
    2. Add steamed carrots and beans; cook, stirring, for 3 to 4 minutes.
       
    3. Tip in cooked rice; stir to mix evenly. Stir-fry for 1 to 2 minutes before adding soya sauce, and salt. Mix well. Continue cooking for about another minute. Toss in the spring onion greens and give the rice a good stir.
       
    4. Transfer to a serving bowl and serve hot.
