    INGREDIENTS

    250 gram udon noodles
    2 tablespoon vegetable oil, plus 2 tablespoons, separate use
    1 egg, medium, beaten
    100 gram onions, finely chopped
    1 green chilli, large, deseeded, sliced at an angle
    3 clove garlic, finely chopped
    1 tablespoon tamarind paste
    1 tablespoon light soya sauce
    1 tablespoon palm sugar
    1/2 teaspoon salt, or to taste

    COOKING METHOD

    1. Bring water to a boil in a medium saucepan over high heat. Add udon noodles and cook for 4½ minutes. Remove from heat and drain in a colander. Set aside.
       
    2. Place a heavy frying pan over medium heat and add oil. Once hot, pour in beaten egg spreading it in a thin layer in the pan. After 30 seconds, work a spatula carefully under the egg from all sides so that the egg doesn’t stick to the pan. Once set, another 15 seconds, turn it over carefully to enable the other side to cook. Cut the egg into long ½” strips. Remove from heat and set aside.
       
    3. Pour oil into a medium wok over high heat, and once hot but not smoking, add onion. Add green chillies and stir well for about 30 seconds. Toss in garlic and continue to fry till the onion starts to color, about 3 minutes.
       
    4. Tip in tamarind paste, stir, and add light soya sauce and palm sugar. Reduce heat to medium and stir well to break up sugar till dissolved. Add salt and 3 tablespoons of water and cook till slightly reduced and thickened, 2 to 3 minutes.
       
    5. Add cooked udon noodles, stirring with a large cooking fork or cooking chopsticks to mix. The sauce should coat the noodles nicely. Fry for about 1 minute before adding the strips of egg. Stir and cook for another 30 seconds. Remove from heat and serve.
