    INGREDIENTS

    2 cup green papaya, grated
    7 clove garlic
    2 red chillies, fresh, deseeded and chopped
    1 teaspoon salt, or to taste
    3 tablespoon peanuts, roasted
    1 1/4 tablespoon lime juice
    1 tablespoon tamarind paste
    2 1/4 tablespoon palm sugar
    2 1/4 tablespoon fish sauce
    5 green beans, cut into 2 to 3-inch pieces

    COOKING METHOD

    1. Grate raw papaya into thin long strips using a papaya grater, if available. Set aside.
       
    2. Toss garlic and red chilli into a mortar / khrok and pound with pestle till mashed. Add salt and peanuts; continue to pound in the mortar pestle till granular.
       
    3. Pour in lime juice and tamarind paste, add palm sugar, fish sauce, and continue to pound till combined. Add green beans and pound with the pestle till lightly crushed.
       
    4. Place half the grated papaya into the mortar and pound gently till mixed. Add the remaining papaya and continue to pound lightly till combined and papaya releases its juices. Do not crush / mash the papaya.
       
    5. Transfer to a serving bowl.
