    INGREDIENTS

    350 gram fish fillets, preferably white fish
    1 1/2 tablespoon fish sauce

    Wet Paste:
    1 tablespoon coriander roots, cleaned and chopped
    3 green chillies, large, seeds removed and chopped
    5 clove garlic, peeled and chopped
    4 shallots, peeled and chopped
    1/8 teaspoon salt, or to taste

    1 tablespoon vegetable oil
    1/2 cup palm sugar
    2 1/2 tablespoon tamarind paste
    1 tablespoon fish sauce

    1/2 cup vegetable oil
    1 red chilli, fresh, large
    40 thai basil leaves

    COOKING METHOD

    1. Place fish fillets in a glass bowl and pour fish sauce over them. Set aside to marinate for 10 to 15 minutes.
       
    2. In the meanwhile, make the wet paste either in a blender or using a mortar and pestle. Add coriander root, fresh green chillies, garlic, shallots, salt, and 3 tablespoons water. Run blender till the mixture transforms into a paste. Remove and set aside.
       
    3. Pour oil into a saucepan or frying pan over medium heat. Once hot, add the reserved wet paste and fry for about 2 minutes. Add the palm sugar and stir well to mix. Pour in 2 tablespoons water. Use the back of the spatula to break palm sugar pieces till dissolved. Simmer for about 5 minutes stirring to ensure that the mixture does not catch on the bottom of the pan. Add tamarind paste and continue to simmer for another 2 minutes, stirring. Pour in fish sauce and stir. Simmer for 2 more minutes before removing from heat. Set aside.
       
    4. Place oil in a frying pan over high heat and add red chilli. Fry till blistered and slightly crispy. Remove the chilli from the oil and set aside on kitchen paper. Add basil leaves to the hot oil, being very careful as the oil will spit and splutter, and fry till crisp. Use a slotted spoon to remove basil leaves. Set aside on kitchen paper to drain.
       
    5. Remove fish from the marinade and pat dry. Place in the hot oil and fry for about 2 minutes on each side. Remove carefully and place in the serving plate. Ladle reserved sauce over the fish and sprinkle over with basil leaves. Chop the crispy red chillies and top the fish with them. Serve.
