    INGREDIENTS

    2 tablespoon vegetable oil
    6 clove garlic, finely chopped
    30 gram onions, finely chopped
    300 gram boneless chicken thighs, diced
    2 red chillies, fresh, deseeded and julienned
    1/2 tablespoon fish sauce
    1 teaspoon palm sugar
    2 teaspoon soya sauce
    1 handful holy basil leaves (tulsi), shredded, or thai basil leaves
    1 teaspoon cornflour, (optional), mixed in 2 teaspoons water to make a slurry
    1/4 teaspoon white pepper powder

    COOKING METHOD

    1. Place wok on high heat; add oil. Once hot but not smoking, toss in garlic and onion; stir fry till aromatic, about 30 seconds.
       
    2. Tip chicken into the wok, and using a spatula, stir and separate chicken pieces.  Cook for 3 - 4 minutes on very high heat, till the chicken changes color and turns whitish.
       
    3. Add red chillies, stir, then add fish sauce, palm sugar and soya sauce, and continue to stir. Toss in basil leaves and stir until wilted.
       
    4. Pour corn flour slurry (optional) into the wok while stirring continuously to mix well. Sprinkle with white pepper powder, give it a good stir and remove from heat.
       
    5. Serve hot with steamed rice.
