    INGREDIENTS

    1 cauliflower, large, cut into large florets leaving stalks long and intact
    1 teaspoon salt

    Marinade:
    2 1/2 teaspoon garlic paste
    1 tablespoon ginger paste
    3/4 teaspoon ajwain (carom seeds), (carom seeds)
    1 teaspoon red chilli powder, mild
    1 cup yogurt, hung for 10 minutes in a muslin cloth
    1 cup besan, (chickpea flour)
    3 tablespoon vegetable oil
    2 teaspoon salt
    butter, for basting
    chaat masala, for garnish

    COOKING METHOD

    1. Add 1 teaspoon of salt to a pot of boiling water and add the cauliflower florets. Blanch for 2 to 3 minutes till the cauliflower is fork tender. Do not overcook this if you are going to be skewering the cauliflower as the florets will tend to fall off the skewers. Remove and drain in a colander.
       
    2. In the meanwhile, place all marinade ingredients in a mixing bowl, stirring as you add them. Mix well till the mixture is a homogenous batter.
       
    3. Carefully add the drained and cooled cauliflower to the batter and mix with your hands. Gently massage the batter between the florets and into all nooks and crannies till evenly coated. Set aside leaving the cauliflower marinate for 45 to 60 minutes.
       
    4. Preheat the oven to its highest grill setting – 450-500 ° F.
       
    5. Skewer the cauliflower with bamboo or metal skewers and grill in the hot oven till slightly charred in parts outside and cooked through, about 12-15 minutes. Baste with melted butter halfway through the process.
       
    6. Sprinkle with chaat masala and serve hot.
