Shahi Raan Ingredients | What goes into the making of Shahi Raan?
Shahi Raan or mutton raan is a dish which many prefer to order at restaurants but it can also be easily made at home provided you have some patience and the right ingredients. The main ingredient of the shahi raan recipe is the meat which is the hero of the dish. You can pick between leg of goat (mutton) or lamb. In most parts of India, the meat more commonly used for shahi raan recipes is mutton.
What is Mutton Raan?
Raan refers to the leg of the goat or the lamb.
The recipe for shahi raan or mutton raan roast calls for two marinades. The first marinade for shahi raan is a rather simple marinade made from garlic paste, ginger paste, turmeric powder, and salt.
The second marinade for the shahi raan is a more complex one which calls for multiple ingredients. These include fried onions, roasted chironji (charoli), roasted watermelon seeds, roasted khus khus or poppy seeds, green chillies, coriander leaves, and yogurt. All these ingredients are blended together and applied to the raan, two hours after applying the first marinade. The raan is then left undisturbed and refrigerated overnight so the flavours are absorbed. Shahi Raan is often made at Iftar or the evening meal with which Muslims end their fast during the holy month of Ramzan culminating in Eid. Iftar is also a period of feasting after a full day of fasting and hence the dish fits the occasion.

To make the Shahi Raan well, a tender hind leg of lamb or mutton preferably about 1¼ kilograms in weight is required. The “trick” to preparing a succulent raan lies first in sourcing the best meat and then in the ‘marinating hours’, which some, proudly do for as long as 24 hours. Yet others, attribute the secret to using ingredients such as papaya paste or kachri powder as they act as meat tenderisers. The ultimate test of a good raan is that the tough cut of meat becomes so tender that you can eat it with a spoon. RECIPE
INGREDIENTS
1st Marinade:
1 1⁄4 tablespoons garlic paste
1 1⁄4 tablespoons ginger paste
1⁄4 teaspoon turmeric powder (haldi)
1 teaspoon salt, or to taste
1 1⁄4 kilograms mutton leg (raan), (or lamb if you prefer), whole, cleaned
2nd Marinade:
150 grams onions, thinly sliced in rounds, fried till brown and crisp (be careful not to burn the onion)
1 1⁄2 teaspoons chironji (charoli), dry roasted till aromatic
2 teaspoons watermelon seeds, dry roasted till aromatic
70 grams cashew nuts, dry roasted till aromatic
2 1⁄2 teaspoons khus khus (poppy seeds), dry roasted till aromatic
1 teaspoon salt, or to taste
14 green chillies, fresh, half deseeded (unless you want the raan really spicy – then do not deseed)
2 1⁄2 tablespoons coriander leaves
1⁄2 cup yogurt, + 2 tablespoons yogurt, whipped till smooth

3⁄4 cup ghee
COOKING METHOD
- Make 1st marinade: Place garlic paste, ginger paste, turmeric powder, and salt in a bowl and mix well.
- Using the pointed edge of a sharp knife, make small slits / holes all over the raan. Place in a glass dish (or other non-reactive dish), and rub the 1st marinade all over the raan, massaging it to get the marinade into the slits, till evenly coated. Cover the dish with plastic cling wrap and set aside in a cool place to marinate for 2 hours.
- In the meanwhile, make the 2nd marinade: Place fried onions into a wet grinder / food processor; add roasted chironji, roasted watermelon seeds, roasted khus khus (poppy seeds), green chillies, coriander leaves, and yogurt. Grind for 2 to 3 minutes or until the marinade is a smooth paste. Set aside.
- After 2 hours, vigorously rub the 2nd marinade all over the raan. Cover the dish with cling wrap again and leave to marinate in the refrigerator overnight.
- Remove the raan from the refrigerator at least 1 hour before cooking.
- Preheat oven to 180°C.
- Place a large heavy pan on medium heat; add ghee. Once ghee is hot, but not smoking, carefully place marinated raan in the pan. Fry till lightly browned, about 3 to 4 minutes on each side. Transfer to a roasting pan / baking dish along with ghee and any remaining marinade. Pour in 2 cups water (add more water later if needed), cover, and place in the preheated oven for 2 to 2½ hours, till the meat is tender. It should be soft enough to eat with a spoon.
- Transfer to a serving platter and top with any gravy that remains in the baking dish. Serve hot with freshly baked naans or other rotis.
