    INGREDIENTS

    3 eggs, large
    3 tablespoon cream
    1/2 teaspoon black pepper powder
    3/4 teaspoon salt, or to taste
    3/4 tablespoon butter
    3 tablespoon spinach, shredded
    30 gram smoked salmon, cut into ½-inch pieces
    40 gram cream cheese

    COOKING METHOD

    1. Break eggs into a medium bowl and beat well. Add cream, black pepper and salt and continue to whisk for another 30 seconds.
       
    2. Place a medium frying pan on low heat and add butter to the pan. Swirl the pan around to spread the butter. Once melted, pour in the whisked egg mixture, and after about 20 seconds, start folding the egg mixture with a spatula. You will notice nice large curds starting to form. Continue cooking and folding till the size of the curds becomes smaller like porridge, about 3 to 4 minutes.
       
    3. Toss in spinach and stir to mix till slightly wilted. Add smoked salmon and stir to heat through, about 1 minute. Spoon in cream cheese and mix well to incorporate. The cream cheese should melt into the mixture. Check seasoning.
       
    4. Remove from heat and serve hot with slices of fresh ciabatta bread.
