    INGREDIENTS

    1/4 cup sabudana (sago or tapioca pearls), washed, and soaked in 3 cups water, overnight
    2 potatoes, medium, boiled till soft, peeled, and mashed
    2 1/2 tablespoon coriander leaves, chopped
    2 green chillies, fresh, deseeded, and finely chopped
    1/4 teaspoon black pepper powder
    1/2 teaspoon roasted cumin powder
    1/4 teaspoon amchur (dried mango powder), (dried mango powder)
    3/4 teaspoon sendha namak (rock salt), or to taste
    1 teaspoon sugar
    2 1/2 teaspoon lime juice
    2 1/2 tablespoon vegetable oil

    COOKING METHOD

    1. Drain sabudana (sabudana will have tripled in size yielding about ¾ cup) in a colander for 5 to 10 minutes, till well drained, and then place in a bowl. Add mashed potatoes, coriander leaves, chopped green chillies, black pepper powder, roasted cumin powder, amchur (dried mango powder), salt, sugar, and lime juice. Mix with a wooden spoon or spatula till evenly incorporated. Do not overmix.
       
    2. Oil your hands and form small balls with the mixture (it should yield 8 to 10 balls), flatten them slightly into tikkis, and set down on a plate.
       
    3. Add oil to a small heavy kadhai or wok over high heat. Once hot, but not smoking, gently place tikkis in the pan, without overcrowding the pan (not more than 3 to 4). Fry, turning once, till crisp and golden brown on both sides, about 2 to 3 minutes in total. Adjust heat as needed as you do not want the outside to brown too quickly while leaving the inside raw. Remove from heat and place on a kitchen tissue paper to drain. Repeat in batches for remaining tikkis.
       
    4. Serve hot with hari chutney or condiment of your choice.
