    INGREDIENTS

    Marinade:
    1 teaspoon salt, or to taste
    2 1/2 teaspoon lime juice
    2 teaspoon turmeric powder (haldi)
    1 1/4 teaspoon red chilli powder, mild
    1 teaspoon ginger paste
    1/2 teaspoon garlic paste

    2 silver pomfret, medium, cleaned and filleted
    1 cup rava, (semolina / sooji), fine
    vegetable oil, to deep fry
    4 wedge limes, to serve

    COOKING METHOD

    1. To make the marinade, place all marinade ingredients in a glass bowl and mix well till smooth.
       
    2. Place cleaned fish fillets in the marinade and rub the marinade into the fish to coat well. Set aside in the refrigerator for 30 minutes.
       
    3. Place a medium skillet / frying pan over high heat. Add oil, and once hot but not smoking, dredge the fillets, one at a time, in the rava / semolina to coat evenly. Carefully slide the fillet into the hot oil and fry till golden brown on both sides (the frying can be done in batches of two fillets at a time). Remove fillets and set on kitchen paper towels to soak up excess oil. Repeat for remaining fillets.
       
    4. Serve hot with wedges of lime on the side.

    Cook’s Note: Red Snapper, Seabass, or Bhekti are also great options, but make sure that the fillets are not too thick.
