    INGREDIENTS

    4 tablespoon butter, softened
    lime zest, from 2 limes
    1/4 cup sugar
    3 cup whole milk, or full cream milk (750 ml)
    6 slice bread, white, crusts removed, roughly torn
    2 eggs, separated
    1 tablespoon lime juice
    3 tablespoon jam, strawberry or apricot
    2 tablespoon castor sugar

    COOKING METHOD

    1. Place butter in a medium glass bowl. Add lime zest and sugar; whisk together until pale and creamy. Reserve.
       
    2. Preheat oven to 180°C.
       
    3. Heat milk in a saucepan over medium heat. Once hot, toss in bread and stir gently to allow the bread to soak in the milk. Remove from heat and set aside for 10 minutes.
       
    4. Pour milk and bread into reserved butter mixture and mix gently with a spatula. Add egg yolks; stir. Pour this mixture into a buttered baking dish.
       
    5. Bake in the oven for 30 minutes or until set and firm to the touch. Remove and cool slightly.
       
    6. Pour over lime juice and add dollops of jam. Using a spatula, spread jam evenly across the top of the pudding.
       
    7. Preheat oven to 180°C (only heat from the top)
       
    8. In a large bowl, whip egg whites. Add half quantity castor sugar and continue to beat to soft peaks and glossy. Fold in remaining castor sugar.
       
    9. Spooned whipped meringue on to the layer of jam and spread across the top. Form peaks with a spatula.
       
    10. Place baking dish in the preheated oven and continue baking till the meringue peaks are golden brown in places, between 5 to 10 minutes (this depends on the distance between the top element of the oven and the dish). Remove from oven and serve hot.
