    INGREDIENTS

    Salsa
    1 1/2 tablespoon butter
    1/2 cup mango, cut into a medium dice
    1/2 cup tomato, peeled, cut into a medium dice
    1/2 teaspoon red chilli paste, made fresh by seeding and mincing fresh red chillies
    1 lime, cut in half, then sliced into thin wedges
    salt, to taste
    1/4 teaspoon red chilli powder
    1 teaspoon lime juice

    1 1/2 tablespoon butter
    14 medium prawns, shells removed, cleaned and deveined
    salt, to taste
    1/4 teaspoon red chilli powder, mild
    1/2 tablespoon coriander leaves, chopped, for garnish

    COOKING METHOD

    1. Make salsa: place a saucepan on medium heat and add butter; stir to melt. Once the butter stops foaming and turns light brown, slide in diced mango, tomato, and red chilli paste. Sauté for about 1 minute. Remove from heat and set aside to cool. Once cooled, toss in lime wedges, salt to taste, red pepper powder, and lime juice, tasting to ensure that there is a good balance of flavours.
       
    2. Place a heavy frying pan or skillet on medium heat. Once hot, toss in butter, stir till melted, then slide in prawns. Prawns should be in a single layer and should not overcrowd the pan. Sprinkle on salt and red chilli powder. Cook for about 2 minutes before turning prawns over and cooking for an additional 2 minutes. Prawns should be lightly browned but not overcooked. Remove from heat and transfer prawns to a serving platter.
       
    3. Spoon prepared mango-tomato salsa onto the prawns, garnish with fresh coriander leaves, and serve immediately.
