500 grams prawns, medium (about 40 to 50 to a kilogram), cleaned and deveined
2 teaspoons cornflour
1⁄2 tablespoon groundnut oil, + 1 teaspoon + ½ tablespoon + ½ tablespoon for separate use
1 egg, large lightly beaten
2 medium carrots, cut in a fine dice
1 teaspoon garlic paste
1 knob ginger, about ½-inch, peeled and sliced into thin rounds
1 medium green bell pepper (capsicum), diced
1⁄2 cup green peas, thawed if frozen, or steamed if fresh
3⁄4 teaspoon black pepper powder
1⁄2 teaspoon salt, or to taste
3 cups cooked rice, preferably cooked the previous day and chilled in the refrigerator
1 tablespoon light soya sauce, or to taste
1 1⁄2 teaspoons chinese sesame oil
3 tablespoons spring onions, sliced at an angle, to garnish
