    INGREDIENTS

    Marinade:
    4 teaspoon light soya sauce
    1 teaspoon salt
    1/4 teaspoon black pepper powder
    1 1/2 teaspoon sugar, powdered
    1 tablespoon shaoxing rice wine
    1 piece ginger, 1 1/2-inches, ground to a paste
    4 clove garlic, ground to a paste
    300 gram chicken thighs, boneless, cut into 1-inch pieces

    Pepper Salt Seasoning:
    1 1/2 teaspoon salt
    1/2 teaspoon white pepper powder
    1/2 teaspoon ginger powder (sonth), dried
    1/2 teaspoon five spice powder
    1/2 teaspoon sugar, powdered

    -
    vegetable oil, to deep fry
    3/4 cup cornflour
    20 basil leaves, deep fried till crispy

    COOKING METHOD

    1. To make the marinade, pour soya sauce into a large bowl. Add salt, pepper, dried ginger powder, rice wine, ginger paste, garlic paste, and stir well. Slide boneless chicken pieces into the bowl and mix well with a fork till evenly coated with the marinade. Set aside to marinate for 30 minutes.
       
    2. Make the pepper salt seasoning by adding salt, white pepper powder, ginger powder, five spice powder, and sugar to a small bowl; stir well and set aside. See Cook’s note below.
       
    3. Place a heavy wok or kadhai over high heat and add oil. Once oil is hot but not smoking, pick up one chicken piece at a time with cooking chopsticks. Dredge it in cornflour to coat evenly, shake to remove excess cornflour, and carefully drop the piece into the hot oil. Repeat for more pieces of chicken, doing this in batches to ensure that the wok/kadhai does not get overcrowded. Turn pieces so that they fry evenly till golden brown. Remove and place on kitchen towels to soak up the excess oil.
       
    4. Transfer chicken to a serving bowl and sprinkle liberally with pepper salt seasoning to taste. Garnish with crispy fried basil leaves and serve hot.

    Cook’s Note: The recipe for salt pepper seasoning will result in more than you need for this dish. The seasoning can be stored in an air-tight container for 30 days in a cool place.
