Palak ki chaat consists of crispy palak or spinach leaves topped with chilled spiced yogurt, finished with imli ki chutney or tamarind chutney. The crunch from the crispy palak (spinach) and the smooth texture of the spiced yogurt makes every mouthful an indulgent one. The juxtaposition of sweet, salty, sour, and spicy flavours brings this dish alive on your tongue.
To make our palak patta chaat recipe, you will need palak or spinach leaves, along with gram flour, red chilli powder and salt, for the light batter. To make the yogurt topping, the yogurt needs to be hung so that it becomes thick. The thick yogurt is spiced with roasted cumin powder, salt, and sugar.

All you need to know about chaat
Chaat comes from Indian word ‘chaatna’ which literally means to lick. The tangy and spicy flavours of chaat make you want to lick the plate clean. We are often asked by our friends from other countries ‘What is chaat made of?’’ Chaat can be made of anything. It can be made from chickpeas like kuliye ki chaat, it can be made from potatoes like aloo ki chaat or aloo tikki, and it can be made of deep-fried dough discs with toppings which when prepared is called papdi chaat.
What is chaat masala used for?
Chaat masala is nothing but a mix of spices blended to make a tangy and spicy powder which is sprinkled over the varieties of chaat, and sometimes used a flavouring for Indian salads.
Is chaat masala good for health? In small amounts chaat masala can be great for digestive health as it has beneficial ingredients such as cumin, black pepper, pink salt etc., all of which aid digestion.
How to make palak ki chaat well
Our recipe for palak chaat is simple and easy to follow but with a few tips and tricks you can ensure you get the best chaat on your plate.
Do not skip the step of hanging and draining the yogurt or the liquid in the yogurt will make the crispy spinach leaves in the palak chaat turn mushy. You could skip this step if you are using thick Greek yogurt.

Working ahead using our recipe of palak chaat:
Have the tamarind chutney and chaat masala prepared a day ahead. You can also prepare the yogurt mixture the night before you make the chaat. All you need to do the next day is to fry the spinach and assemble the chaat. It’ll be ready in no time.
Serving suggestions for palak chaat:
Assemble and serve the palak patta chaat right before eating or the spinach will turn soggy and lose its crispness. Garnish the palak chaat by sprinkling kala chaat masala and red chili powder. You can also add some fine ginger juliennes if you like. You can have this chaat as a 4pm snack, as an appetizer for parties, or replace your daily raita with the chaat for a change on weekends.

INGREDIENTS
Yogurt Mixture:
175 grams yogurt, (about a scant ¾ cup) hung in a muslin cloth for 30 minutes to drain
1⁄2 teaspoon roasted cumin powder
1⁄4 teaspoon salt, or to taste
1 teaspoon sugar, powdered
Batter:
5 tablespoons besan (gram flour)
1 teaspoon salt, or to taste
1⁄2 teaspoon red chilli powder
oil, to fry
200 grams spinach leaves, fresh torn into pieces

6 tablespoons tamarind chutney, (see recipe link below in method)
kala chaat masala, to sprinkle
red chilli powder, to sprinkle
COOKING METHOD
- Make yogurt mixture: tip hung thickened yogurt into a bowl; add cumin powder, salt, and sugar. Whisk well till smooth and set aside.
- Prepare batter: place besan (gram flour) in a bowl; add salt, red chili powder, and 1 cup water. Mix well to make smooth batter. Note that you want a thin batter that will just lightly coat the spinach.
- Place a heavy kadhai or wok on medium heat; pour in oil. Once oil is hot but not smoking, take a hand full of spinach and dip it into the prepared batter. Move spinach around in the batter to coat well. Carefully place the lightly coated spinach in hot oil. Fry for 2 minutes or till golden brown, crisp, and crunchy. Remove, drain, and place on kitchen paper to soak up excess oil. Repeat for remaining spinach, doing this in batches without crowding the pan.
- To assemble palak ki chaat: spread out crispy fried spinach on a serving platter. Drizzle with yogurt mixture and tamarind chutney. Finish by sprinkling kala chaat masala and red chili powder to taste. Serve immediately.
