We are often asked by our friends from other countries ‘What is chaat made of?’’ Chaat can be made of anything. It can be made from chickpeas like kuliye ki chaat, it can be made from potatoes like aloo ki chaat or aloo tikki, and it can be made of deep-fried dough discs with toppings which when prepared is called papdi chaat.
Chaat masala is nothing but a mix of spices blended to make a tangy and spicy powder which is sprinkled over the varieties of chaat, and sometimes used a flavouring for Indian salads.

Do not skip the step of hanging and draining the yogurt or the liquid in the yogurt will make the crispy spinach leaves in the palak chaat turn mushy. You could skip this step if you are using thick Greek yogurt.

Have the tamarind chutney and chaat masala prepared a day ahead. You can also prepare the yogurt mixture the night before you make the chaat. All you need to do the next day is to fry the spinach and assemble the chaat. It’ll be ready in no time.
