1 teaspoon cumin seeds
1⁄4 teaspoon asafoetida powder (hing)
1 tablespoon ginger, finely chopped
2 green chillies, finely chopped
10 curry leaves
1⁄4 cup onion, finely chopped
1⁄2 cup walnut, california walnut kernels, toasted
250 grams green beans, each cut into 2 pieces on a diagonal
1⁄2 teaspoon red chilli powder
1 teaspoon sugar, optional
3⁄4 teaspoon salt, or to taste
COOKING METHOD
- Place a pan over high heat and pour in oil. Once the oil is hot, toss in cumin seeds and asafoetida powder. Give it quick stir then add chopped ginger, green chillies, and curry leaves, being careful to avoid the spitting oil. Stir for about a minute.
- Tip in onion and toasted California walnut kernels, and sauté till the onion turns translucent, about 2 minutes. Slide beans into the pan and continue stirring to coat well, about 2 minutes.
- Toss in red chilli powder, sugar, and salt; stir to coat. Pour in 1/3 cup water, stir well, then cover with a tight-fitting lid. Cook, stirring occasionally, till the green beans are tender and cooked through, and the water has evaporated.
