RECIPE
INGREDIENTS
450 grams boneless chicken thighs, cut into 1-inch cubes
1⁄2 teaspoon salt
1⁄4 teaspoon white pepper powder
Batter:
80 grams maida (all-purpose flour), about ½ cup
1⁄2 teaspoon baking powder
2 large pinches salt
4 tablespoons cornflour
1 egg white
3⁄4 tablespoon vegetable oil
Honey Sauce:
6 cloves garlic, finely sliced
1 teaspoon salt, or to taste
1 teaspoon black chinese vinegar (chinkiang)
1 teaspoon shaoxing rice wine
6 tablespoons honey
1⁄2 teaspoon black pepper powder, (optional but recommended)

1 3⁄4 cups peanut oil, to deep-fry (or any other cooking oil with a high smoke point)
3 cloves garlic, finely sliced
1 1⁄2 teaspoons cornflour, mixed into 3 teaspoons cold water to make cornflour slurry
1 1⁄2 teaspoons sesame seeds, roasted, to garnish
COOKING METHOD
- Place chicken cubes in a bowl. Sprinkle with ½ teaspoon salt and ¼ teaspoon white pepper, mix well, then set aside for 10 minutes.
- Make batter: Take another clean bowl and tip in all dry batter ingredients – all-purpose flour (maida), baking powder, salt, and cornflour; mix well. Add egg whites, ¾ tablespoon oil, and ½ cup ice-cold water. Use a whisk to mix well, then add the reserved chicken. Mix with a spoon ensuring that the batter coats the chicken evenly. Refrigerate for 30 minutes.
- Make honey sauce: Combine garlic, 1 teaspoon salt, black Chinese vinegar, rice wine, honey, black pepper powder (if using), and 125 ml water (about ½ cup) in a bowl. Mix well and set aside.
- Pour 1¾ cups oil into a wok or kadhai over high heat. When the oil is hot but not smoking, use chopstick or tongs to pick up individual pieces of chicken coated with batter and place them in the hot oil. Do this in batches without crowding the pan. Reduce heat to medium-high and fry till cooked through and golden-brown all over, turning the chicken as needed. Remove chicken from oil and place on a plate lined with kitchen paper towels to absorb any excess oil.
- Remove all but 3 tablespoons of oil from the wok / kadhai and place back on high heat. Once hot, toss in sliced garlic to flavor the oil. When golden-brown, remove garlic from oil – the fried garlic can either be discarded or kept for later use. Pour prepared honey sauce into the wok, and cook, stirring continuously for about 2 minutes. Add prepared cornflour slurry and continue to cook, stirring, for another minute. Add chicken and toss carefully using 2 spatulas / wooden spoons to mix and coat evenly with honey sauce. Remove once chicken is heated through.
- Transfer to a serving bowl, garnish with roasted sesame seeds, and serve hot with steamed rice.
