    INGREDIENTS

    250 gram chicken thighs, boneless, cut into 1-inch pieces

    Marinade:
    2 tablespoon light soya sauce
    2 teaspoon sugar

    -
    2 tablespoon vegetable oil, preferably groundnut oil
    2 spring onions, sliced at an angle, white and green parts separated
    3 tablespoon ginger, finely chopped
    1/4 cup hoisin sauce
    1 red chilli, fresh, deseeded, sliced at an angle

    COOKING METHOD

    1. In a medium bowl, mix chicken thighs with light soya sauce and sugar and stir to coat. Set aside for 10 minutes to marinate.
       
    2. Pour oil into a hot wok over high heat. Once oil is hot, but not smoking, add the white part of spring onions and stir. Slide in chopped ginger and stir fry for 30 seconds. Add marinated chicken along with its marinade. Stir fry for 4 to 5 minutes till chicken is cooked through and the marinade has caramelized and thickened.
       
    3. Add hoisin sauce and stir to mix well. Continue to cook for about 1 minute before adding the sliced red chilli. Stir. Toss in the spring onion greens, give it a good stir, and remove from heat.
       
    4. Serve immediately with rice
