You need only a handful of ingredients for our easy mushroom recipe: mushrooms, butter, olive oil, garlic, onion, thyme, parsley, salt, and pepper. As always, choose fresh ingredients for the best flavour.
White wine is optional, but we recommend it because it really elevates this garlic mushroom recipe to another level. Use any good quality dry white wine. It doesn’t have to be very fancy or expensive.
This is one of our favourite button mushroom recipes and white button (common) mushrooms are the best choice for this dish. Keep them whole, with only the stems trimmed. However, as a variation, any type of fresh mushroom will work well. You can opt for cremini mushrooms (also called “baby bellas” or Swiss brown mushrooms), sliced portobellos (for a delicious meaty taste and texture), shiitake mushrooms, or even wild mushrooms.

Wipe each mushroom with a damp paper towel or use a mushroom or small brush to remove loose dirt and debris. Lightly rinse under cold water just before cooking and thoroughly pat dry with a paper towel. INGREDIENTS
4 tablespoons butter
4 teaspoons olive oil
50 grams onions, about ½ medium onion, finely chopped
550 grams button mushrooms, whole, stems trimmed
2 tablespoons white wine, (optional)
1 teaspoon thyme, fresh, roughly chopped
2 1⁄2 tablespoons parsley, roughly chopped, divided use
1 teaspoon minced garlic, or finely chopped if you prefer
1⁄2 teaspoon salt, or to taste
3⁄4 teaspoon black pepper powder
COOKING METHOD
- Spoon butter into a large, heavy frying pan or skillet over medium heat. Add olive oil. Once the butter stops foaming, slide in the chopped onion. Sauté till the onion turns translucent, about 2 minutes.
- Increase the heat to high and tip button mushrooms into the pan. Note that the pan should be large enough for the mushrooms to fit in a single layer. Stir occasionally, turning mushrooms so that they cook evenly on both sides to a light golden brown, 6 to 7 minutes.
- Pour in white wine, if using, and stir till the wine bubbles off and evaporates leaving only its flavour. Add thyme, minced or finely chopped garlic, and 1½ tablespoons parsley; stir for about 1 minute before seasoning the mushrooms with salt and pepper. Sauté till the flavours blend and the mushrooms are cooked through, about 2 minutes.
- Remove from heat, transfer to a serving bowl, and garnish with 1 tablespoon chopped fresh parsley.
- Serve butter garlic mushrooms warm with crusty bread on the side.
Cook’s Note: You can turn this garlic mushroom recipe vegan by omitting the butter and increasing the quantity of olive oil.
Serves: 5 as part of a larger meal. This can be considered a side dish.
