    INGREDIENTS

    Batter
    1 egg, medium
    1 egg yolk
    3/4 teaspoon vanilla extract
    1/4 cup castor sugar
    1/2 cup whole milk
    1/2 cup cream

    -
    1 1/2 tablespoon butter, plus 1½ tablespoons butter, separate use
    4 bananas, sliced into ½-inch rounds
    2 tablespoon brown sugar
    4 slice bread, preferably white milk bread
    castor sugar, for dusting

    COOKING METHOD

    1. Place all batter ingredients: egg, egg yolk, vanilla extract, castor sugar, milk, and cream, in a wide and shallow container and whisk gently until completely smooth in texture.
       
    2. Heat 1½ tablespoons butter over medium heat in a heavy based frying pan. Once melted, add sliced bananas and sauté for about 1 minute. Add half the brown sugar and turn the banana slices. Continue to sauté for another 2 minutes till caramelized. Add the remaining half of brown sugar and turn banana slices once again. Cook for another minute or two till softened and nicely browned. Remove from heat and set aside.
       
    3. Dip the slices of bread in the batter and soak briefly on both sides.
       
    4. Place a pan over high heat and add 1½ tablespoons butter. Carefully pick up 2 soaked bread slices (taking care that they do not break) one at a time and place them in the pan. Reduce heat to medium and let the bread slices cook for about 1 minute before turning them carefully. Cook till the egg has cooked through and the slices are golden brown. Repeat for remaining slices. Remove from heat.
       
    5. Place the French toasts in a serving plate and top with caramelized bananas. Sprinkle with castor sugar and serve hot.
