    INGREDIENTS

    1/2 stalk lemongrass, peeled and minced
    1 teaspoon red chilli, minced
    1 teaspoon garlic, minced
    1 teaspoon fish sauce
    1/2 teaspoon black pepper powder
    1/2 teaspoon salt, or to taste
    1 teaspoon vegetable oil
    12 prawns, large, cleaned and deveined
    1 tablespoon lime juice
    1 teaspoon granulated sugar
    1/2 teaspoon red chilli, minced
    1 tablespoon fish sauce

    COOKING METHOD

    1. Make the marinade by combining all marinade ingredients in a medium glass bowl and mixing well. Place the prawns in the bowl and rub with the marinade. Set aside, covered, for 10 to 15 minutes.
       
    2. Preheat oven to 250° C / 480° F
       
    3. While the prawns are marinating, make the dipping sauce by adding lime juice, sugar, minced red chillies and fish sauce to a small bowl and whisking till well blended. Set aside.
       
    4. Skewer 4 prawns on each lemongrass stalk evenly. These should skewer fairly easily.
       
    5. Arrange on a flat roasting pan spacing the skewers evenly and place in the oven. Grill 2 to 3 minutes on each side till the prawns are lightly browned.
       
    6. Serve immediately with the dipping sauce
