The secret to making this recipe well is two-fold: the trick lies in starting with quality ingredients and following the right technique. You must use the listed ingredients in the oyster sauce chicken recipe to make it restaurant style.
You can procure the Shaoxing rice wine from any good grocery store or supermarket that carries international products, or even online. Light soya sauce is easily available at supermarkets. It imparts a salty taste, so one needs to be mindful of the amount of salt used in the dish while cooking with light soy sauce. Oyster sauce too is easily available at supermarkets. The oyster sauce gives the dish its signature taste. It is made with oyster extracts, salt, and sugar among other ingredients. When combined with other ingredients, this sauce makes the final dish savoury and extremely likeable. If the ingredients are crowded in the wok, they will tend to steam rather than stir-fry. That is not what you want in a stir-fry.
Cooking Chicken with Oyster Sauce
When the oil is hot add chillies till they flavour the oil, followed by sliced ginger and onions. Follow it up with chopped garlic. You need to cook the garlic only till the garlic starts to colour. If you cook it beyond that it may burn.
Keep stirring or tossing (if you can) the chicken when you add it to the wok. On high heat, the chicken will be done in about four minutes when the colour changes to white and is cooked through.
If you wish you can add vegetables such as mushrooms or any other vegetables of your choice to this recipe.

RECIPE
INGREDIENTS
Marinade:
1 teaspoon sugar
2 teaspoons rice wine
2 teaspoons light soya sauce

250 grams boneless chicken thighs, cut into bite size pieces
2 tablespoons oil, preferably groundnut oil
2 dried red chillies, deseeded
1 knob ginger, 1/2-inch, cut into thin round slices
100 grams onions, sliced into thin rounds
1 tablespoon garlic, chopped
1⁄4 teaspoon salt, or to taste
2 tablespoons oyster sauce
1 spring onion, (green part), sliced into small rounds
COOKING METHOD
- Add all marinade ingredients to a medium glass bowl and stir well till the sugar has dissolved. Add chicken and mix to coat well. Set aside and let marinate for 20 minutes.
- Place a medium wok over high heat. Once hot, add oil. Toss in the dried red chillies and stir-fry for a few seconds to flavor the oil. Add sliced ginger followed by onions and continue to fry for another minute. Add chopped garlic and stir vigorously till the garlic start to color.
- Add chicken along with its marinade, and spread it out in the wok in a single layer. Stir it after about a minute – you will notice the color of the chicken beginning to change. Continue to stir-fry for another 3 minutes till the chicken looks white and is cooked through.
- Spoon oyster sauce into the wok and stir to mix well for 30 seconds. Sprinkle with spring onions, remove from heat and serve hot.
Serves: 4 as part of a larger meal
