Sichuan peppercorns—with their particular numbing effect and fresh, slightly citrusy flavour—are essential to this Sichuan chicken noodle recipe. They are very potent and that’s why they are usually added at the end of cooking so as not to overwhelm or ruin a dish. You can’t really substitute Sichuan peppercorn with any kind of hot pepper. But if you simply must substitute, use crushed black pepper rather than red chilli powder or flakes. If you like Sichuan cuisine, it is worth investing in a packet of Sichuan peppercorns.
Chili oil or paste or sauce is a staple in Sichuan cuisine. This can be made at home as it takes only a few minutes to make and is much better than a store-bought product. RECIPE
INGREDIENTS
150 grams boneless chicken thighs, sliced into thin strips
1⁄4 teaspoon salt, or to taste
1 teaspoon cornflour
1⁄2 teaspoon chinese sesame oil
Sauce:
1 tablespoon black chinese vinegar (chinkiang)
2 teaspoons red chilli paste
1 tablespoon hoisin sauce
2 tablespoons yellow bean sauce

oil, for deep frying
4 dried red chillies, mild, deseeded
1 tablespoon garlic, peeled and finely chopped
1 teaspoon ginger, peeled and finely chopped
1⁄2 cup spring onion, white part only, sliced
2 teaspoons sugar
1 teaspoon sichuan peppercorns, crushed
200 grams egg noodles, boiled in ample salted water as per packet instructions (around 5 to 6 minutes), drained, and mixed with 1 teaspoon oil
4 tablespoons chicken stock
1/3 cup peanuts, unsalted, about 50 grams, roasted and chopped
1 cup coriander leaves, about 75 grams, chopped
1 tablespoon spring onion, green part only, sliced
COOKING METHOD
- Place sliced chicken in a bowl. Add salt, cornflour, and Chinese sesame oil. Mix well and set aside while you prepare the sauce.
- Make sauce: Pour black Chinese vinegar (Chinkiang vinegar) into a bowl and add red chilli paste, hoisin sauce, and yellow bean sauce. Mix with a fork and reserve sauce.
- Pour enough oil to deep-fry into a wok or kadhai on high heat. When oil is hot, but not smoking, spoon in sliced chicken in batches without crowding the wok. Use a pair of cooking chopsticks to separate the slices of chicken in the oil. Fry till golden brown, 3 to 4 minutes. Use a slotted spoon or spider strainer to remove chicken from oil and set aside on kitchen paper towels to drain. Repeat for remaining chicken. Reserve 4 tablespoons oil.
- Clean wok and place back on high heat. Pour the reserved oil (3 tablespoons) back into the wok. Once the oil is hot, but not yet smoking, toss in dried red chillies and stir-fry till slightly darkened in colour. Add garlic, ginger, and spring onion (white part), and stir for about 2 minutes. Pour in reserved sauce and add sugar. Give it a quick stir, then add Sichuan peppercorns, cooked noodles, and fried chicken slices. Toss noodles in the wok (if you can) or mix well using chopsticks and / or a spatula. Cook for about 1 minute.
- Pour in chicken stock, stir, and mix well. The noodles will soak in the stock quickly. Stir in peanuts, coriander leaves, and spring onion (green part). Turn off heat.
- Transfer to a serving bowl (or bowls for individual servings) and serve hot.
Cook’s Note: You can substitute malt vinegar or red wine vinegar for the black Chinese vinegar (Chinkiang vinegar) if unavailable.
