    Besan prasad is a traditional but not-so-common sweet dish from North India. It is offered along with besan ka halwa at pujas, at festivals like Diwali and Gurpurab, and at auspicious and joyous occasions like weddings or birthday parties.
     


     

    The heat-generating quality of besan ka prasad makes it the perfect treat on cold winter days. It is also said to be an effective remedy for colds and coughs. Our Besan Prasad recipe is not overly sweet, so you can enjoy it without guilt.

    We think this is the best besan prasad recipe and it calls for just three ingredients—besan (gram flour), ghee, and sugar. It is garnished with only pistachios (pista) and almonds (badam), which enhance the rich taste of the ghee-roasted besan. Make sure to use desi (pure) ghee. Do not substitute with any other fat.
     


     

    Even though only three main ingredients are required, making besan prasad is an art. It takes patience, skill, attention, and lots of stirring to achieve the perfect prasad, one that is free of lumps, is evenly roasted, without raw-tasting besan, has the right crumbly consistency, and a beautiful light golden colour.
     


     

    Garnish this easy besan prasad with chopped or slivered pistachios (pista) and almonds (badam). Or with nuts and dry fruit of your choice like cashews (kaju) and raisins (kishmish). You can sprinkle cardamom (chhoti elaichi) powder to vary the taste of the besan prasad. Adjust the quantity of nuts (mewa) in the prasad according to your taste.

    INGREDIENTS

    200 gram powdered sugar, about 1 cup
    100 gram besan (gram flour), about 1 cup
    200 gram ghee, about 1 cup

    Garnish:
    1 teaspoon pistachio (pista), slivered
    1 teaspoon almonds, soaked and peeled, slivered

    COOKING METHOD

    1. Make chashni (sugar syrup): Bring 240 ml water (about 1 cup) to a boil in a heavy kadhai or wok over high heat. Reduce the heat to medium, then tip in powdered sugar and stir till dissolved. Bring back to a boil and continue to cook till the chashni or syrup reaches half thread consistency. This can take up to 20 minutes. To test this, dip your spatula into the chashni (syrup) and after a few seconds (once cool enough to touch), take some chashni (syrup) between your forefinger and thumb and pull the thumb and forefinger apart. The chashni should form a single thread or string and then break. Once this happens, you have reached half thread consistency.
       
    2. Divide gram flour (besan) into 3 parts. Add 1 part gram flour (besan) to the chashni (sugar syrup) in the kadhai and stir to combine for about 1 minute. Add the other 2 parts in separate additions over a period of 2 minutes, stirring well between each addition. Then continue stirring till the gram flour (besan) is cooked, about another 2 minutes.
       
    3. Slowly add ghee – ¼ cup at a time – stirring for about 1 minute between each addition. The mixture will start to separate. Continue cooking, stirring and scraping the bottom of the pan to ensure the mixture does not catch, till the besan ka prashad separates completely into small granules, about 4 minutes.
       
    4. Remove from heat, allow to cool, then garnish with slivered pistachios (pista) and almonds.

      Serves: 16 as prashad
